How To make Jalapeno Jelly
3/4 c Jalapeno (or serrano)
-peppers 2 md Green bell peppers, seeded
-and sliced 1 1/2 c Distilled white vinegar
6 1/2 c Sugar
6 oz Bottle liquid pectin
1 tb Dried red pepper flakes
Green food coloring, -optional Servings: makes 4 - 1/2 pint jars Notes: Generally used as an hors d'oeuvre with cream cheese on water biscuits. (That's Horses de Ovaries, Al). You can also use it as a glaze for meats, game, and poultry or as an accompaniment to meats or game. Place jalapeno peppers, green peppers, and vinegar in bowl of food processor. Using metal blade and quick on and off turns, finely grind peppers. Scrape pepper mixture into heavy saucepan. Stir in sugar. Cook over high heat, stirring constantly, until liquid comes to a full, rolling boil. Boil for 10 minutes. Remove from heat. Stir in liquid pectin, red pepper flakes, and 2 to 3 drops food coloring, if desired. Immediately pour into hot sterilized jars and vacuum seal. RECIPE:
1c Jalapenos (chopped/food processor)
1c Sugar
1tbs Ginger (chopped/food processor)
1/4tsp Salt
2-4tbs Vinegar/Lime Juice
- Combine chopped jalapenos and sugar, and let macerate for 10 minutes
- Bring to a boil, reduce liquid by 1/2
- season with vinegar/lime juice to your liking

INGREDIENTS
4 1/2 cups finely chopped bell peppers
1/2 cup chopped jalapeños (remove seeds if you don't want it too spicy)
1 1/4 cups apple cider vinegar
1 1/2 packages Sure-Jell
5 cups sugar
This recipe makes about a dozen 4 oz. jars or 6 half-pint jars.

Jalapeno Jam Recipe - How to Make Jalapeño Jam
This jalapeño jam recipe is the perfect way to use up fresh red and green jalapeños from your garden or local farmer's market! Try it over cream cheese with crackers, top it on a burger, put a dollop on grilled salmon, or make a spicy peanut butter and jelly sandwich!
JALAPENO JAM RECIPE
1/2 pound red fresno or jalapeño peppers
1/2 pound green jalapeño peppers
1/2 cup balsamic vinegar
1/4 cup olive oil
1 1/2 cups white sugar
2 1/2 cups water
Salt to taste
Remove stems and seeds from peppers and slice thinly.
Heat a large sauté pan over medium-high heat and add the olive oil. When the oil is hot, add the peppers and sauté until they are softened. Next add the sugar, vinegar and water. Bring to a boil.
Lower heat and simmer about 30 minutes, until the mixture is thick and syrupy.
Season with salt and place in a Mason jar with a lid. This keeps up to 2 weeks stored in the refrigerator.
