【年餅食譜】腰豆餅 Cashew Nut Cookies|新年伴手禮|零失敗|簡單易學|
????食譜 Recipe????
材料 Ingredients: (約40個 / Approximately 40pcs)
有鹽黃油 65克 / Salted butter 65g
糖粉 40克 / Icing sugar 40g
蛋黃 1/2 / Egg yolk 1/2
中筋麵粉 110克 / Plain flour 110g
泡打粉 1/4茶匙 / Baking powder 1/4tsp
腰豆碎25克 / Ground cashew nuts 25g
配料Toppings:
腰豆 分半 / Cashew nuts separate into half
鷄蛋 1 + 鹽巴 1/8茶匙 / Egg 1 + Salt 1/8tsp
製作步驟 Instructions:
1.將腰豆放入烤盤里以170攝氏度烘烤15分鐘 (根據自己的烤箱溫度調整時間)。完全晾涼后,將腰豆放入攪拌器,攪至粉粒狀,切勿過度攪拌,之後放入碗中備用。
Put the cashew nuts on the baking tray and bake at 170°C preheated oven for 15 minutes (Everyone's oven is different, you have to adjust the temperature and baking time). After cool down completely, put the cashew nuts into a blender, blend the cashew nuts becomes powdery with little nuts bits then put in a bowl for later use. Remember do not over beat.
2.將軟化奶油放入攪拌盆中,用打蛋器攪拌至乳霜狀,之後加入過篩糖粉攪拌均匀至呈現淺黃色。
Place the softened salted butter in a bowl and beat until it is creamy. Then add the sifted icing sugar and mix well until light and fluffy.
3.加入蛋黃液攪拌均匀。
Add egg yolk mixture and stir well.
4.加入過篩的中筋麵粉和泡打粉攪拌混匀。
Add the sifted plain flour and baking powder and mix well.
5.加入腰豆碎混匀即可。
Add ground cashew nuts and mix well.
6.將麵團放在烘培紙上,用另一張烘培紙蓋在麵團上,然後用擀麵杖均匀地將麵團擀成1厘米的厚度,用餅乾模具切出圖案,之後放入烤盤里。
Place the dough on the parchment paper, cover the dough with another sheet of parchment paper, then use a rolling pin to roll out the dough into 1cm thick. Use a cookie cutter to stamp out the shapes then put them in the baking tray.
7.在麵團表面放上半顆腰豆,然後刷上一層蛋液。
Put half of the cashew nut on the surface of the dough then brush with a layer of egg wash.
8.預熱烤箱160攝氏度,烘烤15-20分鐘 (每一台的烤箱不同,請大家自己斟酌烤箱温度与时间)。 从烤箱中取出, 在烤盤上稍微放涼3-5分鐘,之後將腰豆餅轉移到凉架上繼續晾涼。完全放涼後,就可以享用啦!腰果餅的口感酥脆可口,加了烤熟的腰果碎,餅乾吃起來又酥又香,入口的瞬間,散發著腰果的濃香,不儘不甜膩,反而增添了層次的口感。
Preheat the oven to 160°C, bake for 15-20 minutes (Everyone's oven is different, you may adjust the temperature and baking time). Remove the cookies from the oven. Let cool on the baking tray for about 3-5 minutes, then transfer the cookies to the cooling rack to let it cool. After completely cool down, then it’s ready to serve! The texture of the cashew nut cookies is crispy yet delicious. With the addition of roasted cashew nuts, every bites full of cashew nuts fragrance and it is not sweet and greasy, everything is perfectly delicious.

Egg Wash Mixture:
✔ 4 Egg yolks
✔ 6 tsp Oil
✔ 2 tsp Almond syrup
Cookie Dough:
✔ 340g Self-Raising Flour
✔ 120g Tapioca Flour
✔ 100g Fine Brown Sugar
✔ 250g Unsalted Butter
✔ 4 TBsp Oil
Bake at 160°C for 15 mins

INGREDIENTS:
Ingredients
1 1/2 c. almond flour, organic
1 tsp. baking powder, organic, gluten & aluminum-free
1/2 cup cashew nuts, organic
2 tbs. coconut oil, raw, extra-virgin, organic
1/4 c. honey, raw, unfiltered, organic
1 tbs. orange zest, fresh, organic (optional)
1 egg, omega-3, cage-free, organic
HOW TO BAKE:
Preheat the oven to 360ºF (180ºC). Mix the almond flour, baking powder, and cashew nuts in a bowl. (It's important that you mix this together and the cashew nuts get a good coat of flour - this way they won't sink to the bottom of the cookie when you bake it.) Melt the coconut oil (or substitute butter). In a separate bowl, whisk the egg. Then add the honey, orange zest (optional), and melted coconut oil or butter. Mix the egg mixture into the almond meal mix and stir. The mixture should be quite wet. Like a baking sheet with parchment paper. Spoon the mixture onto it in 12 little mounds. Bake for 8-10 minutes - keep an eye on it and take out of the oven when the tops are golden and still a little soft to the touch. Let the cookies cool for a few minutes on a wire rack before indulging!

Cashew Nut Cookies 腰豆饼
These addictively delicious buttery Cashew Nut Cookies are really easy to make. It has a crumbly sandy texture and a fabulous nutty flavor。

Ingredients 食材料:
180g cashew nuts (For Topping) 180克腰豆(装饰)
120g cashew nuts(toasted & ground) 120克腰豆(烤熟并磨碎)
250g salted butter (softened) 250g 咸牛油(软化)
100g icing sugar 100克糖粉
300g plain flour 300克普通面粉
30g corn flour 30克玉米粉
1/2 tsp baking powder 1/2 茶匙发粉
For egg yolk wash 蛋黄液:
1/2 tsp water & an egg yolk
1/2茶匙水和一粒蛋黄
can make 76 pieces(10g each)
可制作 76 粒腰豆饼(每粒10 克)
