1 lb Jimmy Dean Sausage 6 Eggs 1/2 c Sour cream 4 tb Chopped onions 4 tb Chopped bell pepper Brown sausage,onions and bell peppers in heavy skillet.Drain.Line baking dish with 3/4 of the sausage mixture.Combine eggs and sour cream.Season to taste.Pour over sausage mixture.Bake @ 350 degrees until eggs are semi-set.Stir egg mixture and top with remaining sausage.Bake until eggs are firm.Serves 4 to 6.

Sausage egg casserole In fry pan on high brown 1 pound of sausage with 1 small chopped onion....add: 1 ½ cups shredded cheese (cheddar, swiss, whatever you have ) ½ cup mozzarella cheese, 2 cups cooked broccoli florets ( cooked in microwave for 1 minute) and 4 cups of shredded potatoes (I did red and left the skins on ). Stir on medium heat for 5 minutes…. In a bowl, put 8 eggs and ¾ cup heavy cream…and whisk…. Spray a casserole dish, and dump ½ of the sausage mixture into it….pour ½ egg mixture over that…add the remainder of the sausage mix, and then top with remaining egg mixture….bake at 375 for 40 minutes….

Sausage Quiche Ingredients • 1 9-inch unbaked deep dish frozen pie crust • 8 oz mild or spicy breakfast sausage • 5 green onions green onions thinly sliced • 2 cups shredded sharp cheddar cheese divided • 1 cup half and half • 6 large eggs • 1 tsp garlic salt • 1/2 tsp freshly ground black pepper • 1/2 tsp ground mustard • few dashes hot sauce optional Instructions 1. Preheat the oven to 350°F. Place pie shell on cookie sheet. Set aside. 2. In a non-stick skillet over medium high heat, cook the sausage 3. Add the green onion and cook for 1 minute longer. Drain excess fat from pan. 4. Spread 1/2 sausage mixture in pie shell and sprinkle with 1/2 cheese. Spread remaining sausage over cheese. 5. In a medium size mixing bowl whisk together the half and half, eggs, salt, pepper,and mustard. Add a few dashes hot sauce, if desired. 6. Pour evenly over sausage. Sprinkle with remaining cheese. 7. Place into oven and bake for 45-50 minutes or until the center is set when gently shaken. Check at 30 minutes and lay a piece of aluminum foil on top to prevent over browning if needed. 8. Allow to rest for 30 minutes. Serve warm.
