How To make Kettle Roast
5 lb Rump roast
1/4 c Bacon drippings
1 x *or:
1/4 c Shortening
1 x Ginger
1 x Salt & pepper
2 ea Bay leaf
5 ea Cloves, whole
1 ea Sm Onion
1 c Water
Have roast tied so as to hold shape. Melt shortening in heavy iron skillet. Season the meat with the ginger, salt and pepper, and sear well on all sides. Add the bay leaves, cloves, onion and water, cover tightly, and let simmer about 4-1/2 hours. Source: Pennsylvania Dutch Cook Book - Fine Old Recipes, Culinary Arts Press, 1936.

Sirloin Tip Roast Recipe On The Weber Kettle Grill
This Smoked Sirloin Tip Roast was cooked in a similar manner that most Tri Tip Roasts I cook on the Weber Kettle Grill are done. Although I didn't sear it like I would a tri tip roast, you certainly could. I avoid searing this particular cut of meat because it has very little fat content. I highly suggest that you let the Sirloin Tip Roast sit for 6 to 8 hours with the BBQ rub on it. This will allow the rub to penetrate deeper into the meat. I generally will cook my steak roasts to between 125 to 130 degrees because I like my meat a little more n the rare side. If you like it closer to medium, you can cook it up to around 140 degrees. Anything past that you might as well buy another cut of meat.
This Smoked Sirloin Tip Roast came out perfectly done. I paired this with mashed potatoes and asparagus, and will use the leftover steak for sandwiches. This roast can be done in the oven using the same technique.

Rump Roast Smoked On The Weber Kettle
Rump Roast isn't something that gets smoked very often, but with some simple seasoning and just under 3 hours on the Weber Kettle using post oak for smoke, I ended up with a perfectly medium rare piece of beef that was incredibly juicy and flavorful.

How to Cook a Beef Top Blade Roast on the Weber Kettle
In this video, I cook a beef top blade chuck roast on my Weber Kettle charcoal grill using the Slow 'N Sear. I seasoned the roast the night before with Kosher salt and Johnny's Seasoned Pepper. Then it cooked it on a 225-275 degree F grill until the internal temperature reached 135 degrees F and seared it.
