How To make Lbi Chicken
No-fat olive oil spray 1/4 lb Uncooked spaghetti 1 Orange bell pepper, cut in 1 c Chicken broth
-strips 2 tb Soy sauce 1/2 c Scallions, sliced (white 2 tb Marsala wine
-part only) Pepper to taste 1/2 lb Chicken breast meat, cut in 1 tb Flour, dissolved in
-bite-sized pieces 2 tb Water Pepper to taste Start a pot of water boiling for the spaghetti. Cut up the chicken & vegetables and srpinkle chicken with pepper. Combine the chicken broth, soy sauce, marsala wine. Sprinkle sauce mixtue with pepper. Spray a large skillet with the olive oil spray, and cook the vegetables over high heat for about 1 minute. Add chicken and stir-fry until no longer pink. Add sauce, and bring to a boil. Reduce heat, and simmer uncovered. Add spaghetti to boiling water and cook for 10 minutes or according to package directions, while chicken mixture simmers. Aftter spaghetti has finished cooking, add flour & water to chicken mixture in skillet, increase heat, and cook until sauce has thickened. Serve the chicken over the spaghetti. Braised Chicken with Olives
Braised Chicken with Olives serves 2 - 4 people
1 whole chicken, cut up (or 2 chicken thighs and 2 chicken legs)
2 -3 tablespoons bacon, cooking and chopped into bits
3 large cloves garlic, whole
1 medium onion, sliced half moon
zest of 1 lemon
1 teaspoon rosemary, chopped
1 teaspoon thyme, chopped
1 1/2 cups cherry tomatoes
1 1/2 cups olives (Kalamata or green Italian)
juice of half lemon
salt and pepper to taste
1 cup wine (I use Pinot Grigio)
1 chicken or vegetable stock
Directions:
-Get a heavy bottomed, deep skillet ( I used cast iron) hot with some oil. Add the chicken, skin side down and cook for 5-6 minutes or until skin is crispy. Remove from heat.
Add sliced onion, salt and pepper and cook 3 minutes.
-Add whole garlic and white wine. Scrape up bottom bits.
-Add lemon zest, herbs, bacon bits, cherry tomatoes, olives, lemon juice, and chicken stock.
-Boil and reduce for about 5 minutes. Check for seasoning and add more salt and pepper to taste.
- Add the chicken back into the braising liquid. Spoon some liquid over the top.
- Lower the heat to low, cover and cook on stove top for 1 to 1 1/2 hours or until chicken is very tender and liquid has thickened a lot. You may have to let it cook uncovered for the last 20 minutes depending on how much liquid is left. You want it to be a thick sauce. Add a large pat of butter to the sauce at the end if you wish.
- Serve with polenta, rice, or mashed potatoes.

Ingredients (Marination)
Chicken 6 leg pieces
red chili powder 1 tsp
chili flakes 1 tsp
turmeric powder
coriander powder 1 tbsp
cumin powder 1 tbsp
crushed whole coriander 1 tsp
crushed whole cumin 1 tsp
Chinese salt 1 tsp
Bar b q food color or (yellow food color)
lemon juice 3 to 4 tbsp
ginger garlic paste 2 tbsp
Mix all ingredients with all the spice . Make deep cuts on chicken pieces spread the spice mixture on chicken marinate for about 4 to 5 hours or over night. Pre heat the oven for 10 mints on 220 after that grill chicken for about 30 to 40 mints on lower grill then drain the extra water and again grill chicken for 10 mints on upper grill.Serve hot.
