I have never had such juicy and delicious fish! Quick and Easy Cod Fillet Recipe
Ingredients and recipe:
Place 450g cod fillet on a paper towel
Sprinkle salt and black pepper on top
Flip over and repeat
Medium heat
Pour olive oil in the pan
Fry for 5 minutes
Place 2tbsp unsalted butter into the pan
Chop 3 cloves of garlic
Add thyme
Continuously scoop the butter on top of the fish
Squeeze 1/2 lemon on top
Done!

Baked Cod with Garlic And Herb Ritz Crumbs

Ingredients
Good olive oil
4 center-cut boneless, skinless cod fillets (6 to 8 ounces each)
Kosher salt and freshly ground black pepper
1/2 cup Ritz cracker crumbs (15 crackers; see Cook's Note)
1/3 cup panko (Japanese bread flakes)
2 tablespoons minced fresh parsley
2 teaspoons minced garlic (2 cloves)
1 teaspoon grated lemon zest
3 tablespoons unsalted butter, melted
1/4 cup dry white wine, such as Pinot Grigio
2 tablespoons freshly squeezed lemon juice
Lemon wedges, for serving
Directions
Preheat the oven to 400 degrees F.
Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes.
Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside.
Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. (Don’t worry if some crumbs get into the sauce!)
Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center, depending on the thickness of the fish. Sprinkle with salt and serve hot with the pan juices and lemon wedges.
Cook’s Note
To make the crumbs, crush the Ritz crackers into the bowl of a food processor fitted with the steel blade and process until finely ground.

Oven Baked Cod With Ritz Cracker Topping With Butter, Lemon & Parsley
Oven baked cod with Ritz cracker topping with lemon, butter and parsley is a delicious fish recipe that you can put together in about 20 minutes! Join Eric from Simply Elegant Home Cooking as he demonstrates this New England classic. It is very important to buy the highest quality fish you can find, and be sure you get wild caught fish. The cod can be substituted for other white fish such as halibut or haddock. Also, be sure to use Ritz crackers, which have a delicious buttery flavor and consistency. Other types of crackers will not taste as good!
Ingredients:
-2 pieces of thick cut wild caught cod or other white fish
-2 tablespoons butter
-1 small pack of Ritz crackers (approximately 14 crackers)
-1/2 lemon, cut into slices
-1 large handful of chopped Italian parsley
-Salt and pepper to taste
Directions:
-Remove the cod from the fridge 30 minutes before you plan to cook. Pat it dry with a paper towel.
-Crush the Ritz crackers into large crumbs. This can be done either in their packaging or by placing into a freezer bag and using either your hands or a rolling pin. Be sure not to crush too much. You want large crumbs, not a fine powder.
-In a small skillet, melt the butter over a low heat. Once butter is melted, turn off the heat and add the crushed Ritz crackers, along with the parsley, salt, and pepper.
-In either another skillet or sheet pan, melt a small amount of butter to prevent sticking. While the butter melts, season the cod with salt and black pepper.
-Place the cod into the buttered skillet or sheet pan, and spoon over the Ritz cracker and butter mixture. Do not worry if some of it falls off on the sides.
-Place the skillet into a preheated 375 degree F oven, and cook for about 18-20 minutes or until desired doneness.
-Serve and enjoy with the sliced lemon!
