How To make Lemon Sweet Chicken
1/4 cup Flour
1 chicken -- (2 1/2 - 3 lb) cut
up 1 teaspoon Salt
2 tablespoons Cooking oil
1/2 cup Water
1 Can frozen lemonade concentr -- (6 ounces)
3 tablespoons Brown sugar
3 tablespoons Catsup
1 tablespoon Vinegar
1 tablespoon Cornstarch
1 tablespoon Cold water
Hot cooked rice
Coat the chicken pieces with mixture of flour and salt. In a skillet, brown chicken on both sides in hot oil. Transfer the chicken pices to the crock pot. Blend the thawed lemonade concentrate, the 1/2 cup water, brown sugar, catsup, and vinegar; pour over chicken. Cover and cook on high heat setting until tender, 3 to 3 1/2 hours. Remove the chicken to platter; keep warm.Skim fat from the pan juices. Measure juices; add water if necessary, to make 1 1/4 cups liquid. Place the liquid into a sauce pan. Blend 1 T of cold water with the cornstarch. Stir into the pan juices. Cook and stir till thickened and bubbly. Remove from heat. Pass the sauce with chicken; serve over rice.

Makes 5 Containers (Meal Prep Containers) -
Ingredients -
2 1/2 Tbsp (50ml) - Olive Oil, Divided
2 - Large Heads Broccoli, Florets & Stems Trimmed
250g (8.82oz) - Green Beans, Top & Tailed
1kg (2.2lbs) - Chicken Thigh, Boneless & Skinless, diced
1/2 Cup (125m) - Chicken Stock
3 - Garlic Cloves, Minced
2 - Lemons, Juiced
1/3 Cup (80g) - Honey
1 tsp (2.5g) - Onion Powder
1 1/2 Tbsp (30ml) - Soy Sauce
2 tsp (10ml) - Sesame Oil
1 1/2 Tbsp (12g) - Corn Flour
Seasoning To Taste
Basmati Rice -
350g (12.35oz) - Basmati Rice, Washed
700ml (700g) - Cold Water
Salt To Taste

The broccoli and beans can be replaced with a wide variety of your favourite vegetables. Below is a list of substitutes that work well.

Chicken Breast Instead of Thighs -
This recipe can be made with chicken breast instead of thighs. To do so, prepare the chicken using the same method but cook the chicken for 6 minutes instead of 10 minutes. Follow the remaining steps as per normal.

1lb Chicken Tenders
2 cups buttermilk
1/4 cup hot sauce (don’t be soft)
1 Tbsp Cajun
1 Tbsp lemon pepper
Dry Batter:
1.5 cups rice flour (sub: flour)
1.5 cups potato starch (sub: corn starch)
1 Tbsp lemon pepper
1 Tbsp Cajun powder
Sauce:
5 tbsp butter
1 lemon’s zest
1/2 a lemon’s juice
Lemon pepper to taste
