AVOCADO PESTO PASTA Vegan Recipe
This avocado pesto is so versatile. You can add a mix of any greens & herbs and whatever nuts & seeds you have handy. The nutritional yeast gives this vegan pesto the cheesy taste that romano or parmesan cheese would give a standard pesto. Excellent on top of pasta or tossed with some steamed/ roasted veggies. Green power!!!
Ingredients
1 1/2 cups of greens (spinach, kale, arugula etc.)
1/2 cup herbs (basil, parsley, mint, coriander etc.)
1/2 cup nuts/seeds (pine nuts, almonds, walnuts, pecans, sunflower seeds, pumpkin seeds...)
1 avocado
2-3 olives
2 cloves garlic
1 lime (adjust to taste)
olive oil (use as needed to adjust pesto consistency)
salt and pepper to taste
2-3 tbsp nutritional yeast (optional but very good!)

Avocado Pesto
Spaghetti with Avocado Pesto is just another way to enjoy pesto. The avocado is the ingredient in this recipe that will make the pesto creamy and indulgent but you will still get that wonderful traditional pesto flavour you love. After you make this recipe you may start using this pesto for other things like chicken, fish or even as a dip.
RECIPE
MORTADELLA, FRESH MOZZARELLA & PESTO RECIPE
Spaghetti with Avocado Pesto

Serves 4
Ingredients
80g fresh basil
2-3 cloves of garlic
40g pine nuts, toasted optional
2 large ripe avocadoes, peeled, pitted and flesh removed
Juice of one lemon
Salt, to taste
Freshly cracked pepper, to taste
60g Parmigiano-Reggiano, finely grated
1/2 cup to 1 cup extra virgin olive oil
1lb Spaghetti
Method
1. Cook the pasta in a large pot of boiling salted water until al dente, according to package instructions. Reserve pasta water.
2. Add basil, garlic, pine nuts, lemon juice, avocado and half of the Parmigiano-Reggiano to a blender. Season with salt and freshly cracked pepper. Blend, adding olive oil in a steady stream to create a puree, adding as much oil as you like until your desired consistency. You can leave it on the thicker side if you like and thin it out with pasta water later. You can also add half oil and half water if you like. Taste and adjust any seasonings. You can do this while the pasta is cooking or just before finished as the avocado pesto mixture may start to turn brown as it’s exposed to air. It will still be fine to eat, just won’t look as green.
3. Drain pasta and add into a bowl along with a ladle of pasta water. Add avocado pesto mixture and toss along with the rest of the Parmigiano-Reggiano to coat all the pasta, adding more pasta water as needed to desired consistency. Enjoy!

Let me show you how to make my super easy yet delicious AVOCADO PESTO PASTA! #shorts
Ingredients (serves 4):
-360gr pasta (I chose “fusilli”)
-1 large avocado
-30gr basil
-the juice of 1/2 a lime
-40gr pine nuts (you can use cashews or almonds as well)
-6/7 spoons extra virgin olive oil
-1 garlic clove (optional)
-a pinch of salt
In a blender, mix your avocado with some basil, the juice of half a lime, pine nuts, extra virgin olive oil, salt and a garlic clove (optional).
Boil your pasta until it’s very very al dente, then mix it with your sauce, adding some pasta water and stirring until delicious!
If you want to make it extra sexy, you can garnish with some cherry tomatoes!

large handful of basil leaves

some salt
juice from half a lemon
RECIPE
Put everything in the blender and blend, blend, blend!! When it's the consistency you like it (we took ours to smoothie-like consistency), toss it with warm soba noodles or eat on its own with crackers or sliced bread.
Top with shredded Parmesan cheese and red chile flakes.
