How To make Live Well: Pasta E Fragioli
1 tb Olive oil
1 Onion, chopped
2 Garlic cloves, minced
28 oz Canned tomatoes
38 oz Canned white kidney beans
2 c Vegetable stock
1/4 c Sun-dried tomatoes, slivered
1/2 ts Dried basil
1/2 ts Dried oregano
1/4 ts Pepper
1/2 c Elbow macaroni
1/4 c Parmesan, freshly grated
In large heavy saucepan, heat oil over medium heat. Add onion and garlic; cook, stirring for 3 minutes. Add tomatoes to saucepan, breaking up with spoon. Drain and rinse beans; add to saucepan along with stock, sun-dried tomatoes, basil, oregano and pepper. Bring to boil; reduce heat, cover and simmer for 20 minutes. Stir in pasts; return to boil. Reduce heat; cover and simmer for 10 minutes or until pasta is tender. Sprinkle with Parmesan. This is a quick and easy Pasta e Fagioli recipe right from my mom's book. Hope you enjoy !!.......
Ingredients ..3, 15oz cans of Cannellini Beans..
1 box Ditalini pasta....
1 cup vegetable broth ....
1 cup of water.....
1, 28oz can San Marzano Tomatoes (whole).......
1l2 cup diced onions.....
3 cloves fresh garlic (grated on dish).......
fresh chopped parsley (to taste).........
Fresh basil (small ribbon) to taste.........
salt and pepper (to taste)...........
garlic powder (few dashes).........
1 tsp dried basil.........
grated pecorino romano & parmesan cheese (to taste, PLENTY !)

Pasta e Fagioli
Ingredients:
equal amounts 1 onion, carrots + celery
3 cloves garlic, finely minced
equal amounts cannelini beans and red kidney beans
Chopped rosemary leaves
to taste salt and pepper
(Can of tomato if you have)
to adjust thickness, bullion broth
to taste romano cheese
cooked pasta elbow pasta (boil water, cook and drain pasta)
1. Saute in olive oil: onions, carrots + celery until onions are translucient. Add garlic and cook till golden
2. Add oregano, resemary, salt and pepper.
3. take rinsed canned beans and add to pot
4. Add a can of tomatoes, if you have them
5. adjust thickness with stock
6. add grated Romano cheese
7. add pasta and cook for 3 more mintes.
8. serve with extra romano cheese
