How To make Liver Loaf
1/2 lb Veal or pork stew meat
3/4 lb Liver
1/2 lb Bacon; diced
2 Eggs
4 tb Chopped fresh sage
2 tb Minced garlic
1/4 ts Freshly ground black pepper
1/2 c Dry white wine
Call this an American pate, if you like. Serve it with sour pickles, brown mustard and pumpernickel bread. COMBINE ALL INGREDIENTS in a glass bowl, cover and refrigerate overnight. The next day, grind the mixture twice using a meat grinder fitted with a large die. Or pulse until well combined, but not too smooth, in a food processor. Place the mixture in a loaf pan, cover tightly, place the loaf pan in a water bath, and place in preheated 375F oven until done, about 1 1/4 hours. Remove from the oven, unmold and serve immediately. Or place the
loaf under a 3-pound weight, let cool to room temperature and then chill in refrigerator before serving.

LIVERWURST // Matt the Butcher
Here's one way of making liverwurst that you can re-create at home. It's a great addition to a charcuterie board or can be enjoyed by itself on a sandwich or with some good crackers.
If you don't have an immersion circulator or sous vide capabilities, you can turn the oven on at 175°F and place the liverwurst chub in a water bath until the internal temperature reaches 145°F, probably around 2 hours if water bath is preheated.
RECIPE FOR 1 Kilo:
Pork Liver 66% 666g
Pork shoulder ground 33% 333g
Salt 1.8% 18g
Pink salt #1 0.25% 2.5G , WITH ONLY SODIUM NITRITE and SODIUM CHLORIDE! please read manufactures directions before using this product. Link below.

Onion chopped 30% 300g
Black Pepper ground 0.3% 3g
Milk powder 1.5% 15g
Coriander ground 0.2% 2g

Ingredients
Mustard
Mayonnaise or Miracle Whip
Braunschweiger Liverwurst
Cheese (optional)

In this video, I'll walk you through,
The very tempting and easy to make recipe with liver.
You can use chicken or pork liver as well!
Ingredients
2lb beef liver
1/4 cup flour
3 eggs
2 tbsp sour cream
1tsp salt
3 carrots
3 onions
3 bay leaves
1 cucumber
1/2 cup sour cream
1/3 cup mayo
2-3 garlic cloves
Green onions
Cook onions and carrots until soft, add bay leaves and let it cool. Wash and clean liver. Add flour, eggs 2 tbsp sour cream, salt to blended liver and combine. Make liver pancakes and let them cool. Grind cucumber. Mix together sour cream, mayo and garlic. Assemble our cake. Liver pancake-sauce-cucumber-carrots+onions and continue. Garnish with green onions. For better taste let cake rest in the fridge for couple hours or overnight.

Unser leckeres Abendessen für die ganze Familie ist fertig.
Die Hälfte einer kleinen Zwiebel hacken.
