How To make Low Fat Corn Lasagna

mozzarella cheese, part-skim, shredded

ricotta cheese, nonfat

egg

teaspoon
oregano leaves

teaspoon
salt

teaspoon
pepper, black
27 1/2
oz
prego sauce
9

lasagna noodles
1
cup
water
1/2
cup
cheese, mozzarella, shredded
Directions:
Preheat oven to 325 degrees. Spray 9x13 baking dish with nonstick vegetable spray. In mixing bowl, combine mozzarella, corn, ricotta, egg, oregano, salt, and pepper. Line bottom of baking dish with 3/4 c sauce. Layer half of noodles and top with half of cheese mixture. Repeat and pour remaining sauce over top. Carefully pour water around edges and sprinkle with mozzarella. Tightly cover pan with foil and bake 1 hour and 15 minutes. Let rest 10-15 minutes before serving.

Here is a great comfort food with only 21g of net carbs per serving. I added 1 beaten egg to the cottage cheese mixture to help it stay together a little better and also let out sit for 15-20 minutes before serving.

1 large clove garlic, minced
1 1/2 c lowfat cottage cheese
1 c fat free sour cream
1 can chopped green chili peppers
1/2 c chopped cilantro (optional)
2 tsp ground cumin
1/8 tsp salt
2 1/2 c salsa
4 whole wheat tortillas, halved
1 1/4 c shredded, low fat Monterey Jack cheese
350° for 30 minutes
Serves 6
Per serving: 250 calories, 8g fat, 4g saturated fat, 24g protein, 24g carbohydrates, 3g dietary fiber, 50g cholesterol, 840 mg sodium

Mexican lasagna with no boil noodles is an easy dish featuring layers of taco meat, spices, tomatoes, corn and cheese. We're using red enchilada sauce for a flavorful dinner recipe all in one pan. 1 small yellow onion peeled and diced
1 lb ground beef
1/2 lb Mexican chorizo
2 teaspoons smoked paprika
2 teaspoons cumin
1 teaspoon salt

3/4 cup canned corn drained
1 10 ounce can red enchilada sauce (we like Siete enchilada sauce)
