How To make Luncheon Oyster Cups
18 oysters -- & their liquor
2 1/4 cupfuls milk
1 tablespoon margarin
1 pimiento
1 cupful grated cheese
1 cupful chopped celery
Flour 2 tablespoons shortening
1 teaspoonful salt
4 teaspoonfuls baking-power
** you will note tablespoon should be tablespoonful also did you notice the spelling of margarine.
Melt the margarin, add three tablespoonfuls of flour, and cook until the mixture bubbles. Add one and one-half cupfuls of cold milk gradually, stirring constantly. Stir in the celery and cook twenty minutes in a double-boiler. Add the pimiento chopped and the cheese. Cook the oysters in their own liquor until the edges curl, and add them, cut in small pieces, together with the liquor strained, to the white sauce. Serve in cups made of the following mixture: sift together two cupfuls of bread flour, the salt, and the baking-powder. Mix in the shortening thoroughly and add about three-fourths cupful of milk or enough to make a soft dough. toss on a well-floured board, roll to one-have inch thickness, and cut with a biscuit cutter. Press each biscuit over an inverted greased gem-pan. Bake a delicate brown in a 450 Degree F. oven. Arrange on a hot platter and fill the cases with the oyster mixture.
I am not sure that a gem-pan is maybe equivalent to our muffin tins.

Dill Pickle Ranch Seasoned Oyster Crackers
These crackers are a quick and easy zesty snack.
Recipe:
Taste test crackers first, if salty you want to cut back on the ingredients, so they are not too salty.
9 oz Oyster Crackers
1/4 cup Olive Oil
1- 2 ounces of Dry Ranch Seasoning
1 1/2 TBsp of Dried Dill
1/4 - 1/2 tsp of Garlic Powder
1/2 - 1 TBsp Dill Pickle Juice
Mix all ingredients together except for crackers. Mix well. Pour over crackers and mix well until all crackers are coated.
Preheat oven to 250 degrees, spread out on a parchment lined cookie sheet. Bake for 10 minutes, remove and flip and back for 5 minutes.
Let cool and enjoy.

A few years ago during the holidays, Richard and I spent an afternoon with his friends Andrea & Travis. Travis brought out these oyster crackers that were tossed in oil, seasoned up and then baked. They were almost like a crouton but far more addicting and snack-able. I knew I had to make my own version and call it Oyster Cracker Munch.
This is the PERFECT thing to eat on its own, top on salads or soups or to mix with nuts, chocolate or whatever else for the ultimate bar snack. Even better - it's the perfect gift when placed in a tin or mason jar to give to others and it couldn't be cheaper or easier to make either using your Instant Pot air fryer lid or your oven.

Fried Oysters with Michael's Home Cooking
This is a great way to start out a meal with this appetizer. Fried Oysters are a favorite of mine. I make an avocado dipping sauce. If you are not into the avocado sauce, the oysters are excellent on a tossed green salad or with cocktail sauce or tartare sauce.
Ingredients:
2 avocados
1 teaspoon lemon juice
1 teaspoon cajun seasoning
1 teaspoon hot sauce
1 minced garlic clove
1/4 cup sour cream
1/4 cup mayonnaise
1 teaspoon Worcestershire Sauce
2/3 cup all purpose flour
2/3 cup corn meal
1/2 teaspoon salt
1/4 teaspoon pepper
Oil for frying
Fry oysters for 3 minutes total time @ 350F in the hot oil.

Oyster Omelette aka O Chien
Ingredients:
1 cup Oysters
3 cloves Garlic
2 Eggs
1 teaspoon Tapioca Starch mix with 3 teaspoons Water (1:3 ratio)
Salt to taste
1/2 cup chopped Spring Onion
1 tablespoon Cooking Oil
1 Calamansi Lime
1. Heat oil and sauté minced garlic till fragrant.
2. Season tapioca mixture with a pinch of salt and pour into pan.
3. Break eggs and spread it.
4. When eggs are nearly set, add oysters and spring onion.
5. Stir fry gently for ten seconds then dish up.
6. Serve with lime and your favourite hot sauce.
