1 lb Ground beef 1 T Parsley flakes 1/2 t Salt 1 lb Can diced tomatoes 3 cn 6oz tomato paste 1 pk 10oz lasagna noodles 3 c Cottage cheese 2 ea Beaten eggs 1/2 t Salt 1/2 t Pepper 1/8 c Parsley flakes 1/2 c Parmesan cheese 1 1/2 lb Grated mozzarella cheese Brown ground beef. Drain fat and wash with warm water to remove excess fat. Add parsley flakes, salt, tomatoes and tomato paste. Simmer uncovered for 30 minutes. Combine cottage cheese, eggs, seasonings and parmesan cheese. Mix with meat sauce. in a 9x13 pan, pour half the mixture over a layer of cooked noodles. Cover with half the mozzarella cheese. Repeat layers. Bake at 375 degrees for 30-45 minutes. Let stand 10 minutes before serving.

Margaret's recipe for plant based luxurious Lasagne has a tasty filing with a silky cheesy sauce. Yes its possible to have the fab Lasagne totally plant based, vegan! I'm sharing my easy recipe for Bechamel sauce. Leave out the Nutritional Yeast and you have the Bechamel. Adding the cheesy nutritional yeast adds flavour and B vitamins. If you're not sure about avoiding lumps then use a whisk when you introduce the Cornflour/Arrowroot then swap to the wooden spoon. Stirring avoids lumps but if you do happen to get some lumps then just run the sauce through a fine strainer to remove them. You can also swap out the Lasagne sheets for slices of grilled courgette to reduce the calories. Arrowroot is made from dried root vegetables and may be less processed than cornflour. Just use it in the same way.
