As you know, we almost rarely cook on weekdays because of work. Usually we just dabao (get takeout) from the coffeeshops near our place and one of our favourite choices of dinner is economy rice or more fondly referred to as Cai Png in Hokkien. In case you didn't know what an Economy rice stall sells, think Panda Express-- the stall pre-cooked a good variety of dishes and customers can select any of these dishes to go with white rice. This sticky honey pork dish was inspired by one of the cai png stalls Roland usually patrons. They cooked this dish so well that I had to get Roland to cook it at home too.

Ingredients:
Serves 6
1st - marinate the pork for at least 2 hours

600g of pork loin with bones
1.5 tablespoons of light soya sauce
1 tablespoon of Chinese white rice wine
1 tablespoon of oyster sauce
1/2 teaspoon of baking powder
A generous dash of white pepper
3 tablespoons of cornflour
2nd: Deep fry pork twice (1st fry over medium heat & 2nd fry over high heat)
3rd: Putt the dish together

1/2 thumb size of ginger - julienne
4 cloves of garlic - chopped
1 cup of water
2 tablespoons of light soya sauce
2 tablespoons of honey
1 tablespoon of dark soya sauce
Add marinated pork

Pork stir fry with green pepper, or what we call “青椒肉丝” is a simple recipe, but it involves a Chinese restaurant’s secret. I am sure many of you have wondered why the meat in Chinese restaurants is so tender and succulent. I will reveal the secret and you will be able to make perfect stir fry from now on.
INGREDIENTS:
To Marinade the Pork
223 grams (1/2 lb) of pork
1/4 tsp of salt
1/4 tsp of white pepper (Amazon Link -
1 tsp of dark soy sauce (Amazon Link -
1 tbsp of Chinese cooking wine (Amazon Link -
1 egg white
1 tbsp of cornstarch (Amazon Link -
1 tbsp of cooking oil
To Make the Sauce (碗芡)
1 tbsp of light soy sauce (Amazon Link -
1/2 tbsp of oyster sauce (Amazon Link -
1/2 tsp of sugar
1/2 tsp of five spice powder (Amazon Link -
1 tsp of cornstarch (Amazon Link -
60g (1/4 cup) of water
Others:
2 tbsp of pork lard or vegetable oil to stir fry
170 g (6 oz) Green pepper
3 cloves of garlic, diced
1.5 tsp of sweet flour sauce (Tian Mian sauce) (Amazon Link -
INSTRUCTIONS
Thinly julienne the pork and marinade it with salt, white pepper, dark soy sauce, Chinese cooking wine, and egg white. Mix well then continue to massage the meat for 5 minutes.
Add a big drizzle of oil and mix to prevent the meat from tangling, making it easier to stir fry later. Set it aside.
Thinly slice the garlic and julienne the green chili pepper. If you don’t eat spicy food, use bell pepper.
In a bowl, thoroughly combine the light soy sauce, oyster sauce, sugar, five-spice powder, cornstarch, and water. Set it aside
Turn the heat to high and heat the wok until smoking hot. Add the pork lard and stir the pork over high heat for a couple of minutes or until the meat changes color.
Add the tiam mian jiang (甜面酱) and mix well.
Switch the heat to medium, and add the garlic and green pepper. Keep mixing until the pepper is slightly welted. Pour in the sauce and stir well. Serve with white rice.

4 tbsp gochugaru, Korean red pepper flakes or regular red pepper flakes
2 tbsp mirin
1 1/2 tbsp fish sauce
3 tbsp soy sauce
2 tbsp maesilaek, Korean plum extract or apricot jam
2 tbsp sugar
1/4 tsp black pepper
10 cloves garlic, chopped
1 1/2 lb pork butt, shoulder or belly, thinly sliced
1 large onion, sliced
1 tbsp cooking oil
4 green onions, cut into 2-inch long pieces
1 red or green chili, optional

Servings 4-6 servings
Ingredients:
Slow-Cooked Pork Belly:
2.2 lb (1Kg) rindless pork belly slices chopped in half (each piece being approx. the length of your index finger)
4 1/4 cups (1 Litre) hot chicken/veg stock
1 thumb sized piece of ginger peeled and finely chopped (or 1 tbsp of minced ginger)
3 cloves garlic peeled and chopped in half
1 tbsp. rice wine
1 tbsp. caster sugar
Glaze:
2 tbsp vegetable oil
pinch of salt and pepper
1 thumb-sized piece of ginger peeled and minced
1 red chilli finely chopped
2 tbsp Honey
2 tbsp brown sugar
3 tbsp dark soy sauce
1 tsp lemon grass paste
To Serve:
Boiled rice
Green Vegetables
Instructions:
1. Add all the slow-cooked pork belly ingredients to a pan (not the glaze ingredients) I use a cast iron casserole pan.
2. Bring to the boil, then place a lid on, turn down the heat and simmer for 2 hours.
3. Turn off the heat and drain the pork. You can reserve the liquid if you like (Perfect for a Thai or Chinese noodle soup).
4. Chop the pork into bite sized chunks. Add 1 tbsp. of the oil to a frying pan, and then mix the remaining glaze ingredients in a small bowl.
5. Heat the oil and add in the pork, salt and pepper, frying on a high heat until the pork starts to turn golden.
6. Now pour the glaze over the pork and continue to cook until the pork looks dark and sticky.
7. Remove from the heat and serve.
Notes
Can I make it ahead?
Yes, you can make it up to the end of step 2 (where the pork is slow cooked and then drained). Then quickly cool, cover and refrigerate (for up to two days) or freeze. Defrost in the refrigerator overnight before slicing and frying the meat.
You can also make the sauce ahead, then cover and refrigerate it up to a day ahead.
Can I make it Gluten free?
Yes! Replace the soy sauce with tamari. I've done this several times and it works great.Replace the rice wine with sherry (usually gluten free, but best to check).Also make sure you use gluten free stock.
Can I use my slow cooker?
Yes, you can do the first stage in the slow cooker. Cook on high for 4-5 hours or low for 6-7 hours. Keep an eye on the level of liquid and top up with a little more if needed.

This Chinese Braised Pork Belly is known as Dong Po Rou 东坡肉, which is said to be created by Su Dongpo when he was banished to Hangzhou. Traditionally this dish is made by pan-frying the pork belly first then the pork is braised over low heat. However, you know we love to simplify methods without compromising the taste so we took away the pan-frying part and went straight to braising immediately after the pork is blanched. Blanch the following:

700g pork belly
1 thumb size young ginger (sliced thinly)
2 tablespoons Chinese cooking wine (Shaoxing Huatiao wine)

1 stalk of leek (or spring onion / scallion)
30g young ginger (sliced thinly)
50g rock sugar (or brown sugar / white sugar)
2 bay leaves
1 cinnamon stick
1 star anise
250ml Chinese white rice wine (白米酒)
4 tablespoons Chinese cooking wine (Shaoxing Huatiao wine)
125ml light soy sauce
4 tablespoons premium dark soy sauce
Enough water to cover the pork

Grilled Pork Belly | Filipino Style
These grilled strips of pork belly, or Inihaw na Liempo, are marinated in a classic Filipino barbecue flavor that is sweet, savory, and slightly tangy. Although typically cooked over a charcoal grill, you can conveniently grill them in the oven, too.
Equipment
Convection oven, grill, or air fryer
Baking Sheet
Ingredients
2 pounds pork belly slices ½-thick
⅓ cup + 1 tablespoon soy sauce, regular or light
¼ cup lemon or calamansi juice
⅓ cup packed brown sugar sub: any sugar
¼ cup banana or tomato ketchup
6 cloves garlic minced or grated
Black pepper to taste
Dipping Sauce:
¼ cup distilled white or cane vinegar
1 tablespoon minced shallot sub:red onion
Bird's eye chilies to taste; chopped
1 teaspoon sugar
Salt and pepper to taste
Instructions
1. Combine soy sauce, calamansi or lemon juice, brown sugar, ketchup, garlic, and ground pepper (to taste).
2. Marinate pork belly slices and refrigerate for 4 to 8 hours.
3. Preheat oven to 425° F (218° C). Line a baking sheet with double layers of aluminum foil to make cleanup easier.
4. Arrange pork belly slices in a single layer and bake them for 20 minutes.
5. Over medium heat, cook leftover marinade for about 10 minutes until slightly thickened to prevent cross-contamination.
6. Remove the meat from the oven and brush it with basting sauce on both sides. Return it to the oven for another 20 minutes. Adjust baking time based on the thickness of the meat. The thinner the slices, the faster they cook.
7. To caramelize the outside, broil on low for about 3 minutes. Be careful not to burn them.
8. To make sawsawan or dipping sauce, combine the vinegar, shallot, chilies, sugar, salt, and pepper to taste.
