How To make Marshall Islands Macadamia Nut Pie
2 cups macadamia nuts -- coarsely chopped
1/3 cup shredded coconut
1 9 inch unbaked pie shell
4 eggs
1 cup light corn syrup
1/2 cup white sugar
1 1/2 teaspoons vanilla extract
1/4 teaspoon salt
1 cup whipping cream
3 tablespoons cream of coconut
Directions: 1 Preheat oven to 350 degrees F (175 degrees C). Press coconut into bottom and sides of unbaked pie shell. If macadamia nuts are salted, place in colander and rinse with hot water. Drain well; dry thoroughly with paper towel. 2 Combine eggs, corn syrup, sugar, vanilla, and salt in large bowl and mix well. Fold in macadamia nuts. Pour into pie shell. 3 Bake for 15 minutes. Reduce oven temperature to 325 degrees F (165 degrees C), and continue baking until top is brown and filling is set; this will take about 30 more minutes. Let pie cool. 4 To make Topping: Whip cream to soft peaks. Then fold cream of coconut into whipped cream. Slice pie into wedges and serve, passing coconut cream separately. Makes 1 - 9 inch pie

INGREDIENTS:
2 tbsp butter
1 1/2 tbsp sugar
2 tbsp maple syrup
1/2 tsp salt
2 tbsp condensed milk
3 tbsp whole milk
1 tbsp all purpose flour
1 1/4 cup heavy cream
1 tsp vanilla
1 tsp FRESH lemon juice
1/2 cup chopped mac nuts (adjust to your liking - this won't affect the end result)
DIRECTIONS:
1. Melt the butter, add sugar, and stir until the sugar completely dissolves.
2. Add maple syrup, salt, whole milk, and stir to combine.
3. Sift the flour into the pot to avoid getting chunks and stir continuously until it's well incorporated.
4. Add heavy cream and condensed milk, cook on med low heat for 5-10 minutes until reduced to your liking. At this time, taste and adjust to your liking.
5. Finish with the lemon juice. It's very important to use FRESH squeezed lemon juice as it'll completely change the taste using store bought concentrates.
6. Serve with your favorite pancakes, waffles, a side of fresh fruit, and there you have it friends!

9 inch pie shell
3/4 cup macadamia nuts (chopped)
2 Tbsp unsalted butter (melted)
1/2 cup granulated white sugar
3/4 cup dark brown sugar
3 large eggs
1 tsp pure vanilla extract
2 Tbsp dark rum
3 Tbsp flour
1 cup whole macadamia nuts
Preheat oven to 350°F. Layer the chopped macadamia nuts into the bottom of the pre-baked pie shell and set aside. Combine melted butter, granulated sugar, dark brown sugar, eggs, vanilla extract, rum and flour; mix well. Pour the mixture over the chopped nuts. Top with macadamia nuts.
Bake for 50 to 60 minutes on the center rack of the oven or until cooked through. The pie will spring back on top but still jiggle a little until it cools. If the top is getting too dark before the center is done, tent with aluminum foil. Cool for a minimum of three hours. The pie is best made the day before serving.
