How To make Marshmallow Fudge
1 c Milk
2 1/2 c Sugar
2 T Light Corn Syrup
1 t Vanilla
2 Square Unsweetened Chocolate
1/4 t Salt
2 T Oleo
12 Marshmallows
* 6 T of Cocoa may be substituted for the Unsweetened CHocolate Squares Heat milk & chocolate together in heavy saucepan over low heat until chocolate is melted. Add sugar, salt and corn syrup. Cook, stirring until boiling starts. Cover and boil 3 minutes to wash down sugar crystals from pan sides. Uncover. Cook without stirring until thermometer reaches 232 degrees. Remove from heat and cool without stirring to lukewarm. Add vanilla and beat until fudge thickens and looses it's gloss. Cut each marshmallow into 8 pieces and stir into fudge. Turn into greased pan. 16 ounces semi-sweet or bittersweet chocolate (bittersweet chocolate has less sugar.)
1 tsp salt
1 1/4 cups sweetened condensed milk (I make my own with less sugar)
1 tbsp vanilla extract
3 cups mini marshmallows (I use Trader Joe’s corn syrup FREE marshmallows.)

Recipe: Marshmallow Fudge
This is a great recipe for marshmallow fudge.
Marshmallow Fudge:
3 cups (600g) sugar
1 1/2 cups (100g) mini marshmallows
2/3 cup (170g) evaporated milk
1 tsp vanilla extract or 1 tbsp vanilla sugar
1 3/4 cups (400g) semi-sweet chocolate
2 cups (200g) chopped walnuts or other nuts (optional)
3/4 cup (170g) butter
In a heavy saucepan, combine sugar, butter and evaporated milk. Mix it together. I used a spoon to break up the butter. Heat over high heat, stirring frequently. Once the mixture comes to a good, rolling boil, set a timer and boil for 5 minutes, stirring frequently. Remove from the heat. Add chocolate and marshmallows as well as vanilla and stir until everything melts together into one consistency. Add the nuts at the end and stir them in. Pour the warm mixture into a lined casserole dish and spread around. Allow to set for several hours at room temperature. Put in the fridge to set faster. Once it is set, it should be easy to remove by lifting the baking paper. Use a knife to cut into small squares.

Old Fashioned Fudge, traditional recipe/no marshmallows
Old fashioned fudge recipe without sweetened condensed milk or marshmallows. With basic ingredients and technique you can make fudge the way your grandma's grandma made it! Recipes for vanilla and chocolate fudge

INGREDIENTS
2 cups sugar
1 cup whole milk
½ cup evaporated milk
½ teaspoon salt
3 tablespoons unsalted butter
2 teaspoons vanilla
INSTRUCTIONS
Line a baking sheet with parchment paper and set aside. In a medium saucepan combine sugar, whole milk, evaporated milk and salt. Heat over medium and stir constantly until sugar dissolves and mixture comes to a boil.
Reduce heat to medium low and cook until mixture reaches 240F/116C on a candy thermometer. Stir frequently to prevent burning. If you do not have a candy thermometer, drop some of the mixture into cold water. If a soft ball forms, it is ready. If you would like a firmer fudge, cook a few minutes longer. In total it should take about 30 minutes. Remove from heat.
Add butter but do not stir. Allow the mixture to cool in the pot until the butter is melted and the bottom of the pot feels very warm to touch but not hot.
Add vanilla and beat vigorously with a spoon until the fudge begins to thicken and lose its gloss. Quickly spread onto the parchment lined baking sheet to form a slab of your desired thickness. Cool for 2-3 hours before cutting into squares. Fudge tastes best a day or two later.

FANTASY FUDGE
3 cups sugar
3/4 (1-1/2 sticks) butter or margarine
1 can (5 oz.) evaporated milk
2 cups (12 oz.) Semi-Sweet chocolate chips
1 jar (7 oz.) JET-PUFFED Marshmallow cream
1 teaspoon pure vanilla extract
1 cup walnuts, chopped, optional
1. Line a 9-inch square baking pan with foil.
2. Bring sugar, butter and evaporated milk, in a 4-quart heavy bottom sauce pan, over medium-high heat, to a boil. Reduce heat to medium. Continuing stirring for 5 minutes or until candy thermometer reaches 234 degrees F. Remove mixture from heat.
3. Immediately, add marshmallow cream; stir until blended, Add vanilla; stir until blended. Add chocolate chips and blend until all chocolate chips have melted and fudge is smooth.
4. Pour in prepare pan. Cool 1 hour. Cut into squares.
Makes 24 (1-inch) squares
