After months of isolation, Claire is overjoyed to welcome kindred spirit dessert people -- friends, colleagues, fellow pastry chefs -- into her kitchen to bake something together. First up in this series we’re calling (what else) Dessert People? Claire's good friend and food stylist (maybe you've seen her work in Dessert Person?) Sue Li. Watch Sue and Claire attempt to make swirled meringue cookies, mostly fail, and then drown their sorrows in a comforting and delicious meatball recipe that Sue has loved since childhood. 200 grams egg whites, at room temperature
150 grams granulated sugar
150 grams powdered sugar
Pinch of kosher salt
1 teaspoon vanilla extract
1 teaspoon white distilled vinegar
Optional: Strained raspberry jam/Pistachio paste/ Black sesame paste (to taste)

These beautiful meringue cookies are light as air, perfectly sweet, and so easy to make! Great with a cup or coffee and look wonderful on a cookie tray! Meringue cookies are such a delightful addition to the table and so easy to make! I love to flavor mine with a drop of good vanilla but almond and even peppermint are great choices too. Try dipping or drizzling with chocolate for an extra layer of flavor and remember, these make wonderful gifts!.

I had no idea so many people would be interested in my Meringue Cookie Recipe, but after I posted my Color Drip Cake tutorial I had many requests for it! Meringue Cookies are so easy to make, yet wonderfully delicious and light. They are great for dessert tables, a dainty, elegant addition to afternoon tea, or could be a pretty & colorful dessert that isn't very common anymore.
Ingredients:
6 Large Egg Whites (Fresh)
1 1/2 Cups Granulated Sugar
1 Vanilla Bean Pod (Optional, suggested 1 tsp of liquid flavoring as substitute)
1/8 tsp Cream of Tar Tar
Zest of 1 Orange (or other citrus)

Ingredients for making Meringues:
4 Eggs
1/8 Teaspoon of lemon juice
8.8 oz of caster sugar
Vanilla extract
Salt
parchment paper
Instructions for making Meringues:
- First, separate the whites from the yolks with your eggs and pour the egg whites into a large mixing bowl.
- Add your lemon juice to the bowl, and whip the mixture with a stand mixer and mix until the cream holds it's peaks.
- Then while mixing, add your caster sugar gradually, one tablespoon at a time.
- Once all the sugar is added, turn up the speed on the mixer. Once mixed, check to make sure all the grains are gone.
- Now add your a dash of vanilla extract and a pinch of salt and whip the ingredients until the cream forms stiff peaks.
- Now on a baking pan, use a little bit of cream to glue down your parchment paper, and line the bottom of the pan with it.
- Now form and place small balls of your Meringue in the baking pan.
- You can now place the baking pan in the over at 300°F for 25 minuets. Once that's done, turn off the oven and leave the Meringue in the oven for an hour. The Meringues are ready when they no longer stick to the bottom of the pan.
