How To make Microwave Brocolli Mushroom Scallop
1 1/2 pounds fresh brocolli (* see note)
cut into 2" pieces
1/4 cup water
1 cup fresh mushrooms :
sliced
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
3/4 cup milk
1/2 cup sharp cheddar cheese (about 2 oz) -- grated
1. Place brocolli and water in a 2-quart casserole; cover. Microwave until brocolli is fork-tender, 10-12 minutes, stirring after half the cooking time. Drain and set aside.
2. Place mushrooms and butter in a 4-cup measure or medium bowl. Microwave until butter is melted and mushrooms are tender, 2-4 minutes, stirring once. Stir in flour, onion powder, salt and pepper. Blend in milk. Microwave until thickened, 5-8 minutes, stirring once each minute.
3. Pour sauce over brocolli. Sprinkle with grated cheese. Microwave until heated and cheese is melted, another 3-8 minutes.
(*) Using frozen brocolli: Substitute 1 10-oz package frozen cut brocolli. Microwave until fork-tender, 8-11 minutes, stirring after half the cooking time. Continue as directed.

Stir fried scallops with broccoli
西蘭花炒帶子
Broccoli 500g
Scallop 8-10 pcs
Dried scallop 2 pcs (see below for preparation of dried scallops)
Minced garlic 1 tsp
Minced shallot 1 tsp
Cooking wine 1 tsp + 1 tsp
Sugar 1/2 tsp
Salt 1//2 tsp
Wash broccolis in mild salt water. Rinse well and cut into small pieces.
How to prepare dried scallops:
Wipe clean dried scallops with a damp towel. Deep fry dried scallops in oil for 1 min at medium heat until golden. Freeze prepared dried scallops for later use. Soak prepared dried scallops in water just enough to cover for 20min. Tear dried scallops into shredded pieces. Save the soaking water.
Brine scallops:
Mix 2 tsp salt + 1/2 tsp sugar in 250g water. Soak scallops in it for 15 min. Rinse with water and wipe dry. Marinate scallops with white pepper & 1 tsp wine.
Blanch broccolis:
Boil a pot of water and add 1 tsp salt in. Blanch broccolis for 1min. Scoop out.
Heat 1 tbsp oil in pan. Pan fry each side of scallops for 1 -2 min at high heat. Scoop out.
Heat 1 tbsp oil in pan. At medium heat, stir fry shallots until fragrant then add garlic. Add 1 tsp wine. Add broccolis and 1/2 tsp each of salt and sugar. Stir fry. Add 1 tbsp dry scallop soaking water and stir fry. Add scallops and stir fry briefly. Scoop out.
Mix 1/2 tsp cornstarch, 1/2 tsp soy sauce, 1/4 tsp sugar & 2 tsp scallop water. Heat 1 tsp oil in pan and stir fry shredded dry scallops at medium heat until fragrant. Add sauce and cook until a bit thick. Pour onto broccoli and scallops. Serve.

蔥頭碎1茶匙
酒1茶匙+ 1茶匙
糖1/2茶匙
鹽1 /2茶匙
將西蘭花放在鹽水中浸一回沖洗乾淨並切成小塊。
如何準備乾瑤柱:
用濕毛巾擦乾瑤柱, 用中火在油中炸1分鐘,變成金黃色。放涼後放在冰箱以備後用。將乾瑤柱浸泡在水中15分鐘然後撕成碎片。留下浸泡水。
帶子:
250克水中混合2茶匙鹽+ 1/2茶匙糖。帶子浸在其中15分鐘。用水沖洗並擦乾。用白胡椒和1茶匙酒醃帶子一會。
西蘭花:
煮沸一鍋水,加入1茶匙鹽,水滾熄火,焯西蘭花1分鐘。拿出。
在鍋中加熱1湯匙油。在高火下將帶子的每一面煎1 -2分鐘。拿出。
在鍋中加熱1湯匙油。用中火炒蔥頭直到香,然後加入蒜蓉,加1茶匙酒,加入西蘭花和1/2茶匙的鹽和糖。翻炒。加入1湯匙乾瑤柱炒。加入帶子炒一回,盛出來。
混合1/2茶匙粟粉+1/2茶匙生抽+1/4茶匙糖+2茶匙乾瑤柱水。鍋中加熱1茶匙油,並在中火下將切碎的干扇貝炒至香,加粟粉水煮至有點杰,倒西蘭花帶子上。完成。
