Mocha Chocolate Icebox Cake

Ingredients
2 cups cold heavy cream
12 ounces Italian mascarpone cheese
1/2 cup sugar
1/4 cup coffee liqueur, such as Kahlua
2 tablespoons unsweetened cocoa powder, such as Pernigotti
1 teaspoon instant espresso powder
1 teaspoon pure vanilla extract
3 (8-ounce) packages chocolate chip cookies, such as Tate's Bake Shop
Shaved semisweet chocolate, for garnish
Directions
In the bowl of an electric mixer fitted with the whisk attachment, combine the heavy cream, mascarpone, sugar, coffee liqueur, cocoa powder, espresso powder, and vanilla. Mix on low speed to combine and then slowly raise the speed, until it forms firm peaks.
To assemble the cake, arrange chocolate chip cookies flat in an 8-inch springform pan, covering the bottom as much as possible. (I break some cookies to fill in the spaces.) Spread a fifth of the mocha whipped cream evenly over the cookies. Place another layer of cookies on top, lying flat and touching, followed by another fifth of the cream. Continue layering cookies and cream until there are 5 layers of each, ending with a layer of cream. Smooth the top, cover with plastic wrap, and refrigerate overnight.
Run a small sharp knife around the outside of the cake and remove the sides of the pan. Sprinkle the top with the chocolate, cut in wedges, and serve cold.

Mocha Cajeta Ice Cream Recipe
Mocha Cajeta Ice Cream Recipe. Inspired by an Ice Cream that we had on the streets of Mexico city; Glen makes a Cajeta Casera Goat Milk Dulce de Leche Recipe from scratch. Then ads the Cajeta Recipe to this amazing Mocha Ice Cream Recipe.
Ingredients:
500 mL (2 cups) 35% whipping cream
250 mL (1 cup) 3.25% milk
30 mL (2 Tbsp) dry milk powder
30 mL (2 Tbsp) Invert sugar (like corn syrup)
250g milk chocolate
125 mL (1/2 cup) sugar
5 egg yolks
45 mL (3 Tbsp) coffee liqueur (Our Recipe: )
Cajeta or Dulce de Leche to taste (Our Recipe: )
125 mL (½ cup) chocolate chips
125 mL (½ cup) chopped almonds
Method:
In a medium saucepan whisk together the cream, milk, dry milk powder, corn syrup, and milk chocolate.
Bring the mixture to just to a scalding temperature, stirring to mix in the melting chocolate.
In a medium bowl, whisk together the yolks and the sugar.
Whisking constantly, temper the egg yolks with some of the hot cream.
Whisking pour the egg mixture back into the saucepan and cook over medium heat until the mixture reaches 170ºF.
Remove custard from the heat, and let cool to room temp.
Whisk in the coffee liqueur.
Cover and refrigerate until cold.
Place in your ice cream maker and freeze according to manufacturers instructions.
When half frozen, add in the cajeta, almonds, and chocolate chips.
Transfer to a frozen bowl and place in the freezer for 2-3 hours before serving.
