How To make Mustard Greens and Ham Hocks
2 pounds mustard greens or collard greens
2 pounds green cabbage
3 ham hocks
smoked
(about 2 pounds) 3 quarts water
1 tablespoon salt
1 teaspoon freshly ground black pepper
1 teaspoon sugar
1 teaspoon thyme :
leaves
4 medium idaho potatoes -- peeled
(about 2 pounds) cut into quarters
1. Wash the greens thoroughly and drain them by shaking off any excess water. R emove the very thick part of the stems from the greens and coarsely chop the lea ves. Cut the cabbage into quarters and cut the core from the cabbage pieces. C oarsely chop the cabbage and set aside.
2. Put the ham hocks and enough cold water to cover them in a 4-quart saucepan o ver high heat. Heat to boiling, reduce the heat to simmering, and cook the hock s, covered, until almost tender, about 1 1/2 hours.
3. Stir in the chopped greens, salt, pepper, sugar, and thyme. Cook 30 minutes. Add the cabbage and potatoes and cook until all vegetables are tender, about 3 0 minutes. Check the seasonings and serve hot.

CLEAN/WASH MUSTARD GREENS VERY WELL
CUT HAMHOCKS TO SMALLER SIZE
WASH HAMHOCKS.
FIRST: boil ham hocks until tender
next add in fresh mustard greens--boil until tender.
YOU WILL WANT TO END UP WITH ABOUT 2 CUPS OF LIQUID FROM THE BOILING PROCESS WHEN EVERYTHING HAS FULLY COOKED.
NOW ADD SALT TO TASTE--A LITTLE BLACK PEPPER IF DESIRED
AND AT LEAST 2 TABLESPOONS OF WHITE VINEGAR.
ALLOW TO SIMMER FOR ANOTHER 15 MINUTES.
ENJOY

4 cups Chicken Stock or Broth
Salt and Pepper, to taste
Creole Kick, to taste ( I used 2 tbsp.)
2 tbsp. Butter
6 - 8 slices of Thick Cut Bacon
1 tbsp. Vinegar
1 Onion, chopped
4 - 5 Garlic Cloves ( I used Garlic Paste), minced

OLD SCHOOL MUSTARD GREENS WITH HAM HOCKS
GREENS are so simple and easy to make
It's just some good pork and seasoning
Recipe
4-5 bunches greens
1 cup white vinegar
2 tablespoons salt and pepper
3-4 ham hocks
1 cup chopped onions
Clean and wash greens
In large pot add water, vinegar ,onion and ham HOCKS
Simmer for 45 minutes or until meat is tender
Remove meat and add greens
Add salt and pepper and simmer until greens are tender
Add ham HOCKS back to pot and simmer an additional 10 minutes
ENJOY!!
