1/2 lb Scallops, steamed & shelled
1/2 lb Crabmeat
1/2 lb Oysters, steamed & shelled
1/4 c Pimientos, chopped
1/4 c Green olives, chopped
1 ea Garlic clove, minced
1/2 c Onion, chopped
1 c Mayonaise
1 tb Dill, chopped
1 tb Lemon or lime juice, fresh
1/2 c Green Bell pepper, chopped
1 c Potato chips, crushed
Mix all ingredients except the potato chips. Put into a greased casserole. Cover and bake for 10 minutes at 350 degrees F. Add potato chips and return to oven for 20 minutes more.

1 small shallot, minced (about 2 tablespoons)
3 tablespoons brined green peppercorns
1/4 cup cognac or brandy
1 cup salt-free beef stock
1 cup heavy cream
