4 cups rolled oats
1/4 cup chia seeds
2 cups non-dairy milk
3 cups water
Mix and let soak 2-3 hours or overnight. Transfer to blender and add:
1/2 cup raw sugar (or coconut sugar, maple syrup)
1 tsp pure vanilla extract
1 TBSP baking powder
1/2 tsp sea salt
1/2 cup oil (I use grapeseed)
Blend until smooth and cook batter in waffle iron on medium heat until golden, about 7-9 min.

Easy & Healthy Banana Waffles Recipe | The Sweetest Journey
Learn how to make delicious and healthy waffles from scratch with this easy 6 ingredient breakfast recipe.
Ingredients:
1 Cup Whole Wheat Flour
1/2 Teaspoon Baking Powder
2 Ripe Bananas
3/4 Cup Milk (or milk substitute)
1 Teaspoon Vanilla Extract
1 Tablespoon Honey
Directions:
1. In one small bowl, whisk together the flour and baking powder. Set aside. In another larger bowl, mash the bananas, then whisk in the milk. Add the vanilla and honey. Add dry ingredients and mix together just until combined.
2. Grease your waffle iron with cooking spray or butter. Spoon the batter onto the iron. (Make sure not to add too much batter or it will overflow.) Cook waffles for 3-4 minutes.
3. Optional: Spread butter on the waffles while they are still warm. Top with your favorite fruits, nuts, or other toppings.
