BEEF STIR-FRY WITH COUSCOUS [US MEAT]
When you are cooking beef stir fry you can mix it with anything you can imagine. Using couscous and some vegetables as in this recipe is a very good option.
This is a complete meal and you don't need a lot of time to cook it. Simply tasty, delicious, and easy!

Ingredients
1 - 1 ½ cups of couscous grains
Cube of butter
¼ lb goat meat, cut into thin, bite-size pieces or ¼ lb beef, cut into thin, bite-size pieces
Beef/garlic puree ( blend ½ beef bouillon cube, 1 onion, 5 cloves of garlic & a bit of water into a paste)
1 beef bouillon cube
2 carrots sliced
1 tsp tomato paste (optional)
*Tomato blend (tomato blend consists of 1 cup of plum tomatoes, 1 scotch bonnet pepper, 1 onion, 2 g, 1 tsp curry powder, 1 tsp dried thyme, 1 tsp minced ginger, 1tbsp all-purpose seasoning )
½ green bell pepper, diced
½ yellow bell pepper, diced
1 red onion, sliced
30 ml of olive or vegetable oil
Water, as needed
Salt, to taste
Basil, to garnish
Note - if you like your food hot, add 1-2 more scotch bonnet peppers to the tomato blend.
Directions -
1 - Bring 2 ½ cups of water to a boil.
2 - Add a pinch of salt, then add the couscous. Add butter, then leave to cook for 5 to 10 minutes, stirring regularly until water absorbs into the CousCous.
3 - Set couscous aside, to be used later.
4 - Marinate the beef in salt, beef/garlic puree blend and ginger puree.
5 - Fry the meat in olive or vegetable oil on medium heat, until fully cooked.
6 -Add carrots, black pepper, plum tomatoes *(tomato blend), red onion, yellow and green bell pepper.
7 - After about 10 minutes, the sauce should be a certain thickness while simmering; once the oil starts to surface.
8 - Pour in the couscous grains and stir everything until well combined, or until the couscous is soaked in the stew. Reduce the heat to medium-low and cover for 10 min.
9 - When ready, plate the couscous and garnish it with basil.

Couscous is a dish known in Maghreb countries. It has many varieties such as vegetable couscous, meat couscous (chicken, beef, veal or lamb) and I prefer with lamb whenever I make one coz it gives better taste (for me) but there are people who don't eat lamb so chicken is an option too and sometimes others use fish with many vegetables. it's served with semolina or couscous grains. Others are doing the so called COUSCOUS ROYALE wherein they add pieces of roasted chicken and merguez (kind of sausage), I just made the simple one as we are just 2 to eat.
INGREDIENTS:
Lamb meat or any meat of your choice
1.5 liters of water
1tsp of salt, pepper, ginger powder, curcuma, paprika
1tsp of rancid butter
carrots, onions, tomatoes, potatoes, zucchini, butternut, hot green pepper, turnips, chayote, pak choi and bouquet of parsley and coriander.
*you can add more veggies if you want
grains of couscous or semolina (medium one) to accompany
