Here is a mixed veggie fritters/ pakora. You can use more or less variety of vegetables. Dont use a lot of water in the beginning because those veggies will release water when it marinated with salt. also you can omit rice flour but I recommend it to use if you like your fritters crunchy.

About Fritters
A fritter is a portion of fruit, vegetables or other ingredients which have been battered or breaded, or just a portion of dough without further ingredients, that is deep-fried. Fritters are prepared in both sweet and savory varieties. The 1854 edition of An American Dictionary of the English Language by Noah Webster defines fritter as a transitive verb meaning to cut meat into small pieces to be fried. Another definition from 1861 is given as a pancake cont. chopped fruit, poultry, fish; also a small piece of meat fried.
In India, a pakora is a fritter of assorted vegetables and spices. In the South Indian state of Kerala, banana fritters are extremely popular. Peyaji is a Bengali dish of fritters with onions. Fritters are extremely popular roadside snacks all over South Asia and are commonly referred to as pakora (pakoda) or bhajji (bhajia) in local parlance - the onion bhaji also enjoys a high popularity abroad and at home. |

Vegetable Pakora | The Best Spinach & Potato Pakora Recipe
I love Pakoras especially when they are crispy and crunchy, and when I take my first bite and they are super soft and fluffy on the inside. Pakoras are not only eaten on special occasions, but can be enjoyed any time of the day and my perfectly spiced Spinach & Potato Pakoras are a wonderful accompaniment to a hot cup of chai, or as a starter for a nice meal for guests.
Make these to enjoy with family and friends, during a meal, as a snack, or as a festive feast served up during the month of Ramadan, these will go down a treat.

Cooking - 20-30mins
Makes approx. 40-48 depending on size
Ingredients:
2 mugs of Gram flour (500g)
150g baby spinach roughly chopped
2 medium potatoes, peeled and sliced like chips
1 medium white onion finely sliced
2 tablespoons yoghurt
water in a jug
1 teaspoon of:
salt
chilli powder
coriander powder
garam masala
dried chilli flakes and fenugreek leaves
1/2 teaspoon turmeric powder
1 heaped tablespoon of:
cumin seeds and coriander seeds coarsely crushed
