Lumpiang Shanghai is Filipino-style spring rolls made of ground pork, chicken, or beef filling wrapped in thin crepes called lumpia wrappers. The meat-stuffed wrappers are rolled into thin cylindrical shapes, cut into bite-size lengths, and deep-fried to golden perfection.
So, when you simply say Lumpia, people will tend to think you mean the plumper and bigger spring roll rather than the “Shanghai” which is a smaller and meatier one.
Lumpia are Filipino and Indonesian adaptations of the Fujianese and Teochew popiah, which was created during the 17th century in the former Spanish colonial era. In the Philippines, lumpia is one of the most common dishes served in gatherings and celebrations.

This Guam recipe for Filipino lumpia has become common on many Chamorro tables. CHamorus love lumpia and you can't go to a Chamorro party without lumpia on the table. The key to this lumpia recipe is to use the Filipino lumpia wrapper, not the typical eggroll wrapper. And, there should always be more meat than vegetables.

GUAM FILIPINO LUMPIA INGREDIENTS
Set 1
6 cloves of garlic, minced
1 cup chopped yellow onions
2 pounds ground beef or turkey
1 pound ground pork
Set 2
3/4 head of cabbage, shredded
2 1/2 cups of chopped carrots
1 tablespoon of oil
Set 3
1 tablespoon Mr. Yoshida's sauce
2 tablespoons oyster sauce
1/4 cup + 3 tablespoons soy sauce
1 teaspoon black pepper
1 teaspoon seasoning salt
Set 4
1/4 cup + 2 tablespoons all-purpose flour
2 boxes of lumpia wrapper
Tools: colander, large pot, pastry brush, small cup, wax paper, freezer bags

How to Make Lumpia (Filipino Egg Rolls) - itsJudysLife
Try Mom's delicious lumpia recipe!
You'll need:
1 1/2 lbs shredded pork
1 cup minced carrots
1 cup minced water chestnuts
1/4 cup red onion
6 cloves garlic
2 tablespoons chicken powder
1 tea spoon black pepper
1/2 cup chopped green onion (mom forgot to add some)
lumpia wrapper or egg roll wrapper (can be found at any asian market)
1/2 cup canola oil
***Make sure the meat is cooked before serving! Before removing the lumpia from the frying pan, cut one lumpia open from the batch to double check if its fully cooked. Thats probably why I like thin Lumpias ;)

Lumpia wrapper or spring roll wrappers are thin paper like skins. They are soft and light textured but strong enough to wrap and hold any filling without breaking apart.
Try my no messy hand method using brushing techniques, ideal for beginners and so easy to make using only 4 ingredients.
