Today we present for you the recipe of Kale Chane ka Achar/Black Chickpea Pickle
It is a typical Rajasthani pickle of Black Chickpeas (Kala Chana) and Raw Mangoes (Kairi) mixed with Green chilies and Ginger and a large assortment of spices, preserved with mustard oil. This pickle has a wonderful mix of flavours ranging from sour to spicy.
We have used mustard oil for this recipe to give it an authentic aroma and flavour but you can substitute it with any refined oil of your choice.
Remember to sterilize the jars before storing the pickle, so it will keep well for much longer.
Serve it as a accompaniment to chapati, rice, parathas and watch your family savour it with satisfaction! It is sure to tempt them back for another serving!

Ingredients for Green Peas Pickle - मटर का अचार
Peas - मटर - a little more than 2 Cup
Sugar - चीनी - 1 tsp
Coriander Seeds - साबुत धनिया - 1 tbsp
Fennel Seeds - सौंफ - 1 tbsp
Cumin Seeds - जीरा - 1 tsp
Fenugreek Seeds - मेथी दाना - 1 tsp
Carom Seeds - अजवाइन - 1 tsp
Black Pepper - काली मिर्च - 10 - 12
Yellow Mustard - पीली सरसों - 1 tbsp
Mustard Oil - सरसों का तेल - 1/2 Cup
Asafoetida - हींग - 1 pinch
Black Cumin Seeds - कलौंजी - 1/2 tsp
Turmeric Powder - हल्दी पाउडर - 1 tsp
Red Chilli Powder - कश्मीरी लाल मिर्च पाउडर - 2 tsp
Salt - नमक - 2 tsp
Black Salt - काला नमक - 1 tsp
Vinegar - सिरका - 2 tbsp
How to prepare matar pickle?
1. Take 3 cups of water in a vessel and bring it to a boil.
2. Add 1 tsp of sugar to water and boil the water till sugar dissolves. Add 2 cups of green peas to the water and boil them for 1.5 minutes.
3. Turn off the flame and strain the peas. Take a bowl of water with ice cubes and add peas to it.
4. keep them in cold water for 2-3 minutes. Transfer to the strainer and drain the water completely.
5. Spread the peas on a cloth and either pat dry them or leave them under the fan for 15-20 minutes.
6. Dry roast 1 tbsp of dry coriander seeds, 1 tbsp of fennel seeds, 1 tsp of cumin seeds, 1 tsp of fenugreek seeds, 1 tsp of carom seeds, and 10-12 black pepper for 1 or 1.5 minutes.
7. Add 1 tbsp of mustard seeds and roast it together with spices for 15-20 seconds.
8. Once the masala cools down, coarsely grind them in the mixer.
9. Heat 1/2 cup of mustard oil in the pan till it smokes. Turn off the flame and allow it to cool.
10. Add 1 pinch hing and 1/2 tsp of black cumin seeds to the oil.
11. Take peas in a bowl and add coarsely ground spices to the peas.
12. Mix 1 tsp of turmeric powder, 2 tsp of red chili powder, 2 tsp of salt, 1 tsp of black salt, and oil in the peas.
13. Lastly, add 2 tbsp of vinegar and mix well. Leave the pickle for 2 days and stir it once a day.
14. Green peas pickle is ready to be served.

COMPRESSED CUCUMBER

1 tablespoon Dijon mustard
1/2 teaspoon salt
1 tablespoon corn syrup or honey
2 tablespoon olive oil
APPLE MUSTARD GEL
250ml apple juice
Dijon mustard to taste
Apple cider vinegar to taste
1 teaspoon agar agar
SWEET AND SOUR SAUCE
Sugar to taste
1 can (330ml) apple cider
240ml pork stock
Chopped lemongrass
Sliced ginger
Soy sauce to taste
Oyster sauce to taste
Unsalted butter
Cornstarch slurry
