Ingredients 4 each potatoes 1/4 pound white american cheese 1/2 bx lasagna noodles 1
butter 1
milk 2 each onions 1
butter
Directions: Cook potatoes. Mash and add white American cheese. Cook lasagna noodles and drain. Grease an oblong pan with butter. Add a little milk to prevent sticking. Fry onions in butter. Layer noodles and potatoes. Top with onions. Bake at 350 degrees for 35 minutes.

Easy Pierogi Casserole
3 lbs. mashed potatoes, homemade, instant or store bought 2 cups sharp cheddar cheese, shredded Salt and Pepper to taste Butter or Margarine 4 onions, sliced 12 oz box Jumbo Shells
Cook jumbo shells in boiling water for about 11 minutes until done. Mix mashed potatoes and sharp cheese for the filling, set aside, Saute onions in butter, until tender.
Fill the cooked shells with about a tablespoon of the filling. Place filled shells in the casserole dish on top of half of the onions. Place remaining onions over the shells. Bake in a 350 degree oven for 20-25 minutes. Makes six to eight servings.
Great served with sauerkraut and sliced kielbasa.
This is a short cut recipe that ReRe shared with me. ReRe is Ron’s cousin on his father’s side. Pierogi was introduced to me when I first visited Aunt Anna (ReRe’s mom) in Wilkes Barre, PA. Pierogi are filled dumplings, not unlike Italian ravioli. The difference is in the fillings and flavorings. Pierogi can be served as appetizers or entrees, filled with savories such as sauerkraut, cheese, mashed potato, kielbasa, and mushrooms. Thank you ReRe for sharing this recipe and the memories from your mom and aunts and especially for Aunt Lottie who taught Aunt Anna how to make Pierogi.
