For day 3 of my 3rd annual Christmas cookie marathon, I am making another generation-old family recipe! In this video, I am so lucky to have my Nonna’s recipe for her delicious Pignoli Cookies! “Pignolo (Italian: [piɲˈɲɔːlo]; plural pignoli) are a type of cookie from Italian cuisine. Considered a standard of Italian confectionery, they are a common item at Italian bakeries. It is a popular cookie in all of southern Italy, and in Sicilian communities in the United States.
The cookie is a light golden color and studded with golden pine nuts (also called pignoli). Made with almond paste and egg whites, the cookie is moist, soft and chewy beneath the pine nuts.
Often they are formed into crescents; otherwise the cookies are round. Pignoli are a popular Italian holiday treat, especially at Christmas. Because both almond paste and pine nuts are relatively expensive, and this cookie uses substantial amounts of both, this cookie is a luxury food.”

Pine nuts Cookies
Initially, I wanted to make just pine nuts shortbread cookies but later I also made some with pistachios and honestly when I had that one it is equally as good.
Pine nuts Shortbread cookies
1/2 cups Swerve
1/4 cups butter (softened)
1 egg
1 egg yolk
1 tsp vanilla extract
3/4 cups almond flour (sifted)
1/2 tsp baking powder
1 tbsps coconut flour
1/2 tsp salt
1/2 tsp xanthan gum
Pine nuts (or any other nuts of your choice) as much as you like
Preheat Oven at 350 F
Mix Swerve and butter until fluffy
Add egg, egg yolk, and vanilla essence
Mix all the dry ingredients except Xanthan gum and pine nuts.
Pour dry ingredients to the egg mixture little by little
Add Xanthan gum and mix thoroughly
Bake for about 11-12 minutes and let cool completely

Recipe:
16-oz Almond Paste
1 C Sugar
2 Egg Whites
1lb Pine Nuts
Directions: Preheat oven to 350. Combine almond paste, egg whites, and sugar for 2-min in mixer. Using a small cookie scoop (or spoon), form 1.5 balls and roll completely in pine nuts. Place 12 per tray, gently push with bottom of cup prior to baking. Bake for 14-16min, until slightly golden. Enjoy!
