Salmon Burgers With Grilled Pineapple: Good Food Good Times

INGREDIENTS:
2 medium boneless, skinless salmon fillets, roughly chopped
Handful of fresh coriander, finely chopped
1 egg, beaten
1 garlic clove, finely chopped
1 tbsp soy sauce
Juice from half a lemon
1 yellow pepper, roughly chopped
75g Panko breadcrumbs
1 tsp chilli powder
1 tsp ground cumin
1 tbsp of mayonnaise
1 tbsp sweet chilli sauce
Small tin pineapple chunks
Soft baps
Rocket leaves, to serve
STEP 1: MAKE THE FISH CAKE MIX
Bring together the salmon, coriander, egg, garlic, soy sauce, 1 tsp lemon juice, yellow pepper, Panko breadcrumbs, chilli powder and ground cumin by pulsing in an electric food chopper.
STEP 2: SHAPE THE BURGERS
Once blended, take a good handful of the burger mixture, mould into a ball and place on a lined baking tray. Press flat into a burger shape. Repeat. Then place another piece of greaseproof paper over the burgers and place in the fridge for 10 minutes.
STEP 3: MAKE THE SWEET CHILLI MAYO
Combine the mayonnaise, sweet chilli sauce and a squeeze of lemon juice. Then leave in the fridge until you're ready to serve.
STEP 4: FRY THE PINEAPPLE
Fry the pineapple chunks in a medium heat until golden brown. Then place in a bowl to one side.
STEP 5: FRY THE BURGERS
Heat some oil in a pan on a medium heat and add the burgers. Fry for about four minutes on each side until golden brown and cooked through. Then remove from the pan onto kitchen towel to soak up any excess oil.
STEP 6: BUILD THE BURGER
Serve the burgers in a soft bap with the sweet chilli sauce, the pineapple chunks and rocket leaves.

Beef burger patty glazed with a mixture of Heinz Ketchup, HoneyRacha, soy sauce, and sesame oil. Topped with seared pineapple slices, pickled red onions, jalapeños and Heinz Mayonnaise. Recipe below!
Ingredients:
1 cup white vinegar
1 cup water
2 tablespoons sugar
1 tablespoon salt
1/2 red onion, thinly sliced in half-moons
1 1/2 pounds ground beef
1/4 cup Heinz Ketchup
1/4 cup Heinz Honeyracha
3 tablespoons soy sauce
2 limes, juiced
2 teaspoons sesame oil
Salt and pepper
3 tablespoons canola oil, divided
4 canned pineapple rings, drained and patted dry
1/2 cup pickled jalapeños
4 tablespoons Kraft Mayonnaise
4 leaves butter lettuce
4 sweet Hawaiian bread style hamburger buns
Steps:
1. Pickled onions: In a small saucepan, combine the vinegar, water, salt, and sugar. Bring just to a simmer and cook until sugar and salt are dissolved. Place the onions in a jar or glass bowl and pour the vinegar mixture over them. Allow to cool at room temperature, then refrigerate for at least 4 hours before using.
2. Burgers: In a small bowl whisk together the Heinz Ketchup, Heinz HoneyRacha, soy sauce, lime juice and sesame oil. Season with salt and pepper.
3. In a medium bowl, add the ground beef and 3 tablespoons of the ketchup mixture, and mix until combined. Form the meat into 4 patties and season with salt and pepper.
4. Heat a large cast iron skillet over medium high heat, and add 2 tablespoons of oil.
5. Place the burger patties into the skillet and cook for 4 minutes. Flip the burgers and brush with the ketchup glaze. Cook for 2 more minutes, flip, and brush with the glaze again, cooking for an additional 1-3 minutes for medium, or until desired doneness is achieved.
6. Remove the patties and wipe the pan clean. Add remaining one tablespoon of oil, and sear the pineapple rings for 2-3 minutes per side until golden brown.
7. To assemble: Spread mayonnaise on the bottom half of the bun and top with a burger patty, a pineapple slice, pickled onions, pickled jalapeños, and lettuce.

INGREDIENTS
1 lb. ground beef
1 tbsp. Worcestershire sauce
kosher salt
Freshly ground black pepper
8 pineapple rings
1 large red onion, sliced into rings
4 slices pepper jack
4 pieces romaine
8 slices cooked bacon
DIRECTIONS
1. Heat grill to medium-high. In a large bowl, combine ground beef and Worcestershire and season with salt and pepper. Form into 4 patties.
2. Grill patties, pineapple, and red onion until charred, 3 minutes per side. Top burger patties with pepper jack and cover grill to let melt, 1 minute.
3. Top bottom pineapple buns with lettuce, burger patties, bacon, and grilled onions, then top with pineapple bun.
