How To make Pinon(Pine Nut) Cookies
2 eggs
2/3 cup sugar
1 cup all-purpose flour
1/4 cup pine nuts -- toasted
Combine the eggs and sugar in a heavy saucepan and whisk constantly over low heat until the mixture is lukewarm and light in texture, about 3-5 minutes. Remove from heat and whisk until cool; gradually stir in the flour until the batter is smooth.
Preheat oven to 375 degrees. Butter 2 baking sheets and drop the batter by teaspoonfuls onto the pan, leaving about 1 inch between cookies. Let sit 5 minutes. Place 4 or 5 pine nuts on top of each cookie and let them sit another 5 minutes. Bake for 12-15 minutes or until golden brown. Remove from the baking sheets while still warm and let cool on racks.

Pignoli Cookie Recipe
This is my grandmother's recipe from the Island of Ischia my people are from Ischia.

Preheat Oven 350
2 1/2 cups pine nuts
1 (8-ounce) almond paste
3/4 cup sugar, white
2 egg whites
1/2 teaspoon pure vanilla extract, Mexican vanilla
1/4 cup all-purpose flour, a little more is ok
1/4 teaspoon salt
Powered sugar for garnish, optional
Pulse 1/4 cup of the pine nuts in a food processor until coarsely ground.
Break the almond paste with your hands;
add to the processor; process until just mixed.
Add the sugar; process until mixture is crumbly. Add the egg whites and vanilla; process until the dough begins to come together.
Add the flour and salt; process until fully blended and smooth.
Pour the remaining pignoli’s into small bowl. Using a teaspoon and slightly moistened hands, take about 1 teaspoon of batter and roll it into a ball.
Gently drop the ball in the pine nuts and turn until completely coated.
Place the cookies 2 inches apart on parchment-lined baking sheets. Bake 18-20 min.Cool on racks 15 minutes. Dust w/powdered sugar, optional

Ingredientes:
Una lata de leche condensada.
100 gramos de piñones.
Para decorar 10 gramos de piñones.

Печенье с кедровыми орешками
Ингредиенты:
Сахар - 50 гр.
Сливочное масло - 100 гр.
Мука - 150 гр.
Соль
Кедровые орешки - 20 - 30 гр.
Шоколадные капли - 20 - 30 гр.
Приготовление:
1. Мягкое сливочное масло взбей с сахаром до посветления и пышности, добавь соль, орешки и шоколад.
2. В два подхода просей муку и собери тесто в ком. Затем сформуй жгут, оберни пищевой плёнкой и убери в морозилку на 15 минут или оставь на потом.
3. Достаём заготовку и нарезаем на печенье по 2 сантиметра толщиной. Если оставили заготовку на потом, то резать ее нужно через 15-20 минут после морозилки.
4. Поправляем форму печенек при необходимости и запекаем при 180 градусов около 15 минуи. Полностью остужаем.
