How To make Polish Noodles
1/4 c Sweet butter
8 oz Sour cream*
1 lb Ham, cubed
16 oz Ripened tomatoes, chopped
2 c Elbow macaroni**
1 oz Maggi Seasoning OR
-1 tb Soy sauce 1/2 ts Salt, optional
1/2 ts Pepper
2 Green onions, chopped
*light if desired (don't use non-fat) **cooked al Dente (be careful not to overcook) Brown butter in Dutch oven. Add remaining ingredients except onions, salt (if using) and pepper. Mix well. Simmer uncovered for 10 minutes. Add onions and cook 5 minutes more. Melinda's notes: I got this from an old Polish acquaintance long ago. I don't know how original Polish it is since it uses Maggi Seasoning, which I think is German, but we like it. Maggi Seasoning comes in a square-ish brown bottle and can be purchased in the gourmet section of your supermarket. I always omit the salt. The original recipe called for 4 oz. sour cream, but I like it with 8 oz. I usually use the light sour cream, but the non-fat doesn't do well, it seems to just dissolve and become tasteless. Lazanki Noodles Recipe - How To Make Polish Traditional Lazanki Pasta With Sauerkraut | The Food Nut
I present Lazanki Noodles Recipe in this video. I show how to make this traditional Polish food with sauerkraut, mushrooms, pasta, onions and dried prunes. This is a vegetarian version of this Polish lazanki as in traditional cuisine you have to use meat. The way I'm cooking lazanki is mostly used in Poland during Christmas Eve dinner because in Poland people don't consume meat during this holiday. This dish is very unusual and delicious because it has very sweet and sour taste that is balanced by noodles. For this homemade recipe I use trottole gourmet pasta that makes this it more colorful and more elegant. Traditionally small rectangles shaped noodles are used to prepare this dish and very often they are also made from scratch. Obviously I made my life easy in this case and I used store bought delicious tri-color Italian pasta made from durum wheat semolina. The color in those noodles comes from natural ingredients such as spinach powder and tomato powder.
To make lazanki in vegetarian and vegan way you will need ingredients listed below:
4 tbsp cooking oil
2 medium onions
16 oz. / 465g mushrooms
24 oz. / 680 g sauerkraut
1/4 cup dried prunes
17.7 oz. / 500g pasta
salt
black pepper
Cooking instructions:
1) Warm up oil on the big pan or cast iron pot. Cut onions into small cubes and add them to the pan. Sauté.
2) Cut mushrooms into small slices and add to the pan. Mix well. Sauté until all the liquid boils out.
3) Add sauerkraut. Combine it well with onions and mushrooms. Cook it for another 5 - 10 minutes.
4) Cut dried prunes into small pieces and add them to the pan. Add also salt and black pepper. Let it cook on medium-low heat until sauerkraut juice mostly boils out.
5) Add previously cooked pasta or traditional lazanki noodles. Combine everything well. It is ready. Congrats!
It is ready to be served. You can eat this amazing dish warm or cold. Both ways taste great. I like to cook this dish in advance like a day before to let all the taste combine overnight. This pasta dish works also great as a side dish.

Haluski is a Polish cabbage and noodle dish. Smokey bacon and Kielbasa sauteed with cabbage, onions & garlic and then tossed with egg noodles! This is peasant comfort food at it's best!!
Ingredients
1 cup chopped onion
One Polish kielbasa or smoked sausage
1 pound of shredded cabbage
Half pound bacon
Two large cloves minced garlic
1 pound large egg noodle pasta
1/2 cup chicken broth
4 tablespoons of butter
Salt and pepper to taste
