How To make Potatoes with Bacon& Zucchini

sliced fairly thin
2 tablespoon Butter
6 lg Potatoes :
boiled and skinned
4 tablespoon Olive oil
6 Slices bacon
Salt and pepper to taste
In a skillet, fry the bacon until almost crisp. Drain most of the fat. Chop the bacon and return to pan. Add sliced zucchini, butter and oil. Sautee until slightly soft. In a large serving bowl, slice the potatoes about 1/2" thick. Add bacon-veggie mixture, salt and freshly ground pepper and mix well. Serve hot or warm. *You may also use sliced onions in this recipe. Add them with the zucchini.

Zucchini Potato Tomato Casserole
Prep Time 20 minutes
Servings 6 people, as a side dish
Ingredients
2 Tablespoons vegan Margarine
1 large Onion sliced and caramelized until golden brown
2 medium Potato sliced 1/4 thick..
1 medium Zucchini sliced 1/4 thick
1 or 2 Roma or Plum Tomatoes sliced 1/4 thick
1 tsp Salt
3/4 tsp Pepper
2 Tbl vegan Margarine melted
1/3 C vegan Parmesan
Instructions
Preheat oven to 375 degrees.
Melt 1 Tbl of vegan margarine[ in a medium skillet over medium heat. Add onions and saute for 15-20 minutes until tender and caramelized.
Spray a quiche pan or round baking dish with cooking spray.
Spoon caramelized onions into the pan and spread evenly.
Toss potatoes, zucchini and tomato slices with salt and pepper.
Arrange in a single layer over the onions, alternately and overlapping slightly.
Drizzle with melted vegan margarine and cover with foil.
Bake for 30 minutes.
Remove foil and sprinkle with vegan Parmesan.
Do not cover and bake for an additional 35-40 minutes or until golden brown.
Let stand for 10 minutes before serving

Bacon Cheeseburger Meatloaf
3lbs ground beef
2 eggs
1tbs ketchup
1tbs mustard
1 pkg dry ranch seasoning
1/2 onion diced
1/2 cup Panko crumbs
2 1/2 cups shredded sharp cheddar, divided
1lb bacon
Measure with your heart: salt, pepper, onion powder, Tony’s seasoning and garlic powder
Preheat oven to 375. Combine above ingredients (reserve 1 1/2 cup of cheese) in a large bowl with your hands....best tools for this LOL. Form a meatloaf on a parchment or foil-lined baking sheet. Make a trench in the meatloaf and fill will reserved shredded cheese. Drape meatloaf in overlapping pieces of bacon and tuck ends of bacon under meatloaf. Squirt a ribbon of ketchup over the bacon and Bake for 60-70 minutes and use a meat thermometer to make sure the middle is 165.
Parmesan Roasted Potatoes
2-3 lb small yellow potatoes, cut into quarters
1/2 cup grated Parmesan
1/2 cup olive oil
1/2tbs each salt, pepper, old bay seasoning and, Tony’s seasoning, lemon pepper, Italian seasoning
1/8 tsp red pepper flakes
Preheat oven to 375. On a foil-lined baking sheet lay out your potato’s. Drizzle with olive oil and seasonings and toss to coat. Bake for 45 minutes tossing halfway through. When potatoes are starting to get golden they are perfect.
Roasted Zucchini
4 zucchini cut into 1 inch chunks
1/2 tbs each salt, pepper and old bay
Olive oil
Preheat oven to 375. Place on a foil lined baking sheet and drizzle in oil and seasonings. Toss to coat. Bake 30-40 minutes tossing halfway.
