How To make Raised Waffles
1/2 c Warm water
1 pk Dry yeast
2 c Milk
warmed
1/2 c Butter :
melted
1 t Salt
1 t Sugar
2 c All-purpose flour
2 Eggs
1/4 ts Baking soda
USE A RATHER LARGE mixing bowl--the batter will rise to double its original volume. Put the water in the mixing bowl and sprinkle in the yeast. Let stand to dissolve for 5 minutes. Add the milk, butter, salt, sugar and flour to the yeast mixture and beat until smooth and blended. You can use a hand-rotary beater to get rid of the lumps. Cover the bowl with plastic wrap and let stand overnight at room temperature. Just before cooking the waffles, beat in the eggs, add the baking soda, and stir until well mixed. The batter will be very thin. Pour about 1/2-to-3/4 cup batter into a very hot waffle iron. Bake the waffles until they are golden and crisp. This batter will keep well for several days in the refrigerator.

INGREDIENTS
4 (906 g) boneless, skinless chicken breasts or thighs, cut into 2-inch/2.5 cm wide strips
3 to 4 cups (690 to 920 g) cold buttermilk
Neutral oil (such as canola or vegetable) for deep-frying
2 cups (240 g) all-purpose flour
3 tablespoons (21 g) cornstarch
1/2 teaspoon (2 g) baking powder
1 1/2 teaspoons (5 g) smoked paprika
1 teaspoon (3 g) onion powder
1 teaspoon (3 g) freshly ground black pepper

How To Make Yeast Waffles
Milk must be warmed to activate yeast.
Warm means: put your finger in, and it does not burn.
2 cups warm milk
1 stick melted butter.
2 cups all-purpose flour
1 tablespoon sugar
1 tsp salt
1 packet instant yeast
2 eggs
1 tsp vanilla
In a large bowl, whisk the flour, sugar, salt, and yeast to combine. In a separate bowl, whisk together the warm milk/butter mixture, then add it to the flour mixture. In a separate bowl, whisk eggs and vanilla until combined, then add the egg mixture to the batter and whisk until all is incorporated.
Cover the bowl with plastic wrap, and refrigerate for 8 to 12 hrs.
Remove the waffle batter from the refrigerator (it will be foamy and doubled in size) and whisk to recombine (the batter will deflate). Spray the waffle iron with non-stick cooking spray and cook according to the manufacturer’s instructions. Serve the waffles hot off the iron.
Waffles will be light and airy.
** This batter can be allowed to rise at room temperature for 2 hours before cooking.**
