How To make Rasta Pasta
4 oz Angel hair,
1/4 c Olive oil
1 sm Onion, diced
2 cl Garlic, minced
2 tb Ginger, minced
1 ea Chile pepper, seeded &
-- minced 2 c Pumpkin, diced
1 c Stock
1 c Coconut milk
1 ts Coriander
1 ts Cumin
1/2 ts Thyme
1/2 ts White pepper
1/2 ts Nutmeg
1/2 ts Allspice
1/2 ts Salt
1 ea Bell pepper, chopped
4 ea Mushrooms, chopped
1/2 ea Zucchini, chopped
1/4 c Corn, kernels
4 ea Broccoli, blanched
Cook pasta, set aside. Heat the oil over medium heat, add onion, garlic, ginger, and chile pepper and saute 4-5 mins. Add pumpkin and water to pan and cook 15-20 mins, until pumpkin is tender. Add coconut milk, coriander, cumin, thyme, white pepper, nutmeg, allspice, and salt and simmer anoterh 4-5 mins. Place in food processor and process until smooth. Heat remaining oil and pepper, mushrooms, and zucchini. Saute 5 mins. Add corn and broccoli and saute 2 mins. Pour pumpkin sauce into skillet and stir. Bring to a simmer. Cook 1 minute; add pasta. Serve steaming.

1 cup of grated fresh Parmesan cheese or more as needed
1 lb. Pasta
Jerk Seasoning:
1 tbsp. Onion Powder
1 tbsp. Garlic Powder
2 tsp. Cayenne Pepper
2 tsp. Salt
2 tsp. ground Black Pepper
2 tsp. dried Thyme
2 tsp. Sugar
1 tsp. ground Allspice
1 tsp. dried Parsley
1 tsp. Paprika
1/2 tsp. Hot Pepper Flakes

♡INGREDIENTS♡
OXTAIL
-2 lbs oxtails
-vinegar/lemon juice for washing
- 3 tbsp Grace browning
-1 medium onion,chopped
-2 stalks scallion (green onions),chopped
-3 cloves garlic,finely chopped
-a few sprigs of fresh thyme
-1 scotch bonnet pepper (whole)
-1/4 red bell pepper, chopped
-1/4 green bell pepper, chopped
-1/4 yellow bell pepper, chopped
-pinch of black pepper
-1 tsp meat tenderizer
-1 tsp garlic powder
-1/2 tsp cayenne pepper
-2/3 tbsp oil (for braising)
-5 cups hot water (total)
-4 tbsp ketchup
-4 tbsp soy sauce
-1 tsp brown sugar
PASTA
- 3 cups penne pasta
- 4 cups of water
-1 tbsp salt
VEGGIES
- 1/2 red bell pepper, julienned
-1/2 green bell pepper, julienned
-1/2 yellow bell pepper, julienned
- 1 tsp minced garlic
-1 tbsp oil (for sautéing)
PASTA SAUCE:
-1 1/2 cups heavy whipping cream
-1 cup Alfredo sauce
-1 cup Mexican style four cheese
-1 tbsp jerk seasoning (hot & spicy)
You can also use mild (depending on preference)
*Sprinkle a pinch of seasoned salt, garlic salt & parsley flakes & 1 tsp of jerk seasoning to pasta for added flavor*
