Betty's Scrumptious Puttin' on the Ritz Pie

Scrumptious Puttin' on the Ritz Pie
3 egg whites, beaten stiff
1 cup white sugar
1 cup pecan pieces
2/3 of an inside tube of Ritz crackers, crushed finely
8 oz. carton whipped topping (thawed)
1 oz. unsweetened chocolate square
maraschino cherries (if desired, for garnish)
Blend the 3 stiffly beaten egg whites with 1 cup sugar, 1 cup pecan pieces, and 2/3 tube of finely crushed Ritz crackers. (You can place the 2/3 tube of crackers in a gallon-sized zip-lock plastic bag and go over it with a rolling pin until the crackers are crushed finely.) When this mixture is completely blended, pour part of it into a pie plate (which has been sprayed with cooking oil). Spread the mixture across the bottom and up the sides of the pie plate. Now, add the rest of the mixture and smooth until even across the top. Put the pie into a preheated oven at 325 degrees for 25 minutes. Remove from the oven and let cool to room temperature. (You may speed this up, using the refrigerator or freezer.) When the pie is cooled, spread as much whipped topping as desired over the top. Shave chocolate curls or slivers over the top evenly. Cut into pieces and top with a maraschino cherry, if desired. Heavenly!

My Mom's Holiday Cracker Pie - A Quick Take Tuesday Recipe
My mother's Holiday Cracker Pie was the perfect comfort food dessert. I'd also sneak a piece for breakfast sometimes. The real beauty of it, though, is just how simple it is to make.

Strawberries and Cream with Ritz crackers and pecan crust
Strawberry desserts are my favorite. But the typical strawberries and cream recipe can be bit mundane for me - so I like to serve my strawberries and cream over a Ritz crackers and pecan pie bar crust. Imagine freshly sliced strawberries folded into sweetened whipped cream then spread onto a delicious crust made of pecans and Ritz crackers!

with Pecan Pie Bar Crust
For the Crust:
The crumbs of 26 Ritz cracker
1 cup pecans, coarsely chopped
3 egg whites
1 teaspoon vanilla extract
1 cup sugar
Preheat the oven to 350º
-Beat the egg whites until stiff.
-Add sugar and continue beating until well mixed.
-Fold in other ingredients.
-Bake in a well greased 10x10 baking dish for 30 minutes.
-Allow to cool completely
For the Strawberries and Cream:
4 cups sliced strawberries, well drained
2 tablespoons
1 cup whipping cream
2 teaspoons sugar
-Whip the cream until stiff.
-Add 2 teaspoons sugar and beat until well mixed.
-Combine strawberries and 2 tablespoons sugar in a separate bowl.
-Fold strawberries in cream.
-Fill cold pie crust with strawberries and cream.
-Refrigerate 30 minutes.

Blast from the Past: Mystery Pecan Pie Recipe
Pecan Pie is one of the most delicious pies you can make. This is a great variation on pecan pie and is one we absolutely love. You can see the recipe on pauladeen.com (
Ingredients
2 teaspoons vanilla, 1 teaspoon each for pie and topping
1/4 teaspoon salt
1/3 cup sugar, plus 1/4 cup sugar for topping
1 (8 oz) package cream cheese
4 eggs, 1 for pie, 3 for topping
1 deep dish pie shell
1 1/4 cups pecans, chopped
1 cup light corn syrup
Preparation
Blend together 1 teaspoon vanilla, 1/4 teaspoon salt, 1/3 cup sugar, 1 (8 oz) package cream cheese, 1 egg and pour in bottom of unbaked pie shell, top with chopped pecans.
Topping:
Mix 3 eggs, 1/4 cup sugar, 1 cup light corn syrup, 1 teaspoon vanilla and pour on top of pecans. Bake in 350° oven for 45 minutes.
