How To make Rubio'S Fish Tacos
Ingredients

cod, or favorite whitefish fillets (1-1/2 oz ea)

tortillas, corn, as thick as possible, fresh

oil for deep frying
BEER BATTER:
1
cup
flour
1
cup
beer
1
garlic powder, to taste
1
pepper, to taste
WHITE SAUCE:
1/2
cup
mayonaise
1/2
cup
yogurt
SALSA:
1
each
garlic clove, peeled, minced

each
tomatoes, ripe, peeled, seeded, diced
1/2
each
onion, minced
2
tablespoon
cilantro leaves, chopped, stems removed
2
each
jalapeno chiles, seeded, chopped
1 1/2
teaspoon
salt
1/4
teaspoon
pepper
GARNISH:
1
each
cabbage, green, shredded
1
each
lime, cut into wedges
Directions:
Mix flour with favorite spices such as garlic powder, red or black ground pepper. Stir the flour mixture into the beer and mix until well blended.
Wash fish by dipping in cold, lightly salted water or water with a little bit of lemon juice added. Be sure fish is completely dry before dipping into batter.
Prepare salsa; reserve.
Put the vegetable oil into a deep skillet and bring to 375 F. Place fish in a single layer -do not let pieces touch each other. Cook fish until batter is crispy and golden brown.
Heat corn tortillas lightly in a skillet or Mexican comal until they are soft and hot.
To assemble, on each tortilla layer the fish fillet, white sauce, salsa and cabbage. Top it off with a squeeze of lime. Fold tortilla over to serve.

Rubio’s Style Blackened Fish Tacos
Baja style fish taco recipe as good as one you will find at the best California fish taco restaurants like Rubio’s. Fresh ingredients, slices of Avocado and spiced blackened flaky fish come together for this mouth watering taco.
BLACKENED MAHI MAHI FISH TACOS
Yield: 2 Servings ( 2 Tacos each)
And of course, you can always double or triple the recipe if you’re serving a group.
INGREDIENTS
For Blackened Fish
3 Pieces of Mahi-mahi– Approx 4oz each
1 Tbsp. Butter to coat Mahi-mahi
4-5 Tsp. Prepared Blackened Spice Mix
2 Tsp Oil
Blackened Spice Mix
1 Tsp Kashmiri Chili Powder
½ Tsp Cayenne or Chili Powder
¼ Tsp Dried Oregano
¼ Tsp Dried Thyme
½ Tsp Onion Powder
½ Tsp Garlic Powder
½ Tsp Ginger Powder
½ Tsp Mustard Powder
Salt & Pepper
Baja Taco Sauce
1 Tbsp. Mayo
1 Tbsp. Sour Cream or Yogurt
1 Tbsp. Tomato Ketchup
1 Tbsp. Sriracha or Chili Sauce
1 Tsp Maple Syrup or Honey or Sugar
Salt & Pepper
Milk to adjust the consistency
Salt & pepper to taste
Assembling Tacos
Tortillas
Shredded cabbage Green and Red
Sliced onions
Cilantro Chopped
Avocado Sliced
Jalapeño Sliced
Sour Cream
Salsa
Tips:
1) Do not skip brushing the fish with butter. Blackening comes from the charring of butter and not spices.
2) Do not overcook the fish.As this makes the fish dry and will destroy the flavor.
Fish Tacos at Rubio's
I don't normally eat fast food, but I was totally starving and in a hurry! Isn't that the purpose of fast food? For people who are in a hurry?
Well, it's NOT something I will be making a HABIT of because I like sticking to a healthier diet, but this fish taco at Rubio's was indeed a good deal.
Especially for those who don't mind fast food. I will let the video tell you all about how great this deal was for just $2.80! Oh and for those wondering, YES, the taco was pretty darn good!
