Classic Sugar Cookies
INGREDIENTS :
1/2 cup (112 g) softened vegan butter
3/4 cup (150gr) granulated coconut sugar
1/2 vanilla bean
1 tbsp almond butter
2 cups (250g) all purpose flour
1/4 tsp baking soda
1/4 tsp salt
2 tbsp oat milk
1/2 tsp baking powder
1 tbsp flax egg or regular egg
Chocolate sugar cookies

220 gr all purpose flour
1/2 tsp salt
3/4 (75 g) unsweetened cocoa powder
1 cup granulated coconut sugar
1 cup vegan butter (softened)
1 tbsp flax egg or regular egg
1/2 vanila bean
30 gr ground almonds

DAY 166 – Soft Vanilla Sugar Cookies
Makes About 2 Dozen (24 cookies)
Ingredients:
1 ½ cups (200 g) All Purpose Flour
1 cup (200 g) Sugar
¾ cup (150 g) Unsalted Butter – at room temperature
2 Eggs
1 tsp (2 g) Vanilla Extract
½ tsp (3 g) Salt
¼ tsp (1.3 g) Baking Powder
Process:
1) Preheat your oven to 375 degrees (190 degrees in Celsius) and line 2 baking sheets with parchment paper.
2) In a large bowl, cream together the butter and sugar for about 1 minute, add the eggs and vanilla extract and continue to whisk for about 1 minute.
3) Add the flour, salt and baking powder and mix it all in until it’s all combined.
4) Using a small ice cream scoop, scoop out the dough on to the parchment paper lined baking sheets making sure to place them about 3 inches (8 cm) apart.
5) Bake for about 12 minutes or until lightly golden brown around the edges. Make sure you rotate the baking sheets half way through cooking for even baking. Let them cool completely and enjoy!

Ingredients
½ cup (115 g) unsalted butter, at room temperature
½ cup (100 g) packed light brown sugar
½ cup (100 g) granulated sugar
1 large egg, at room temperature
1 tsp vanilla extract
1 ¼ cup (185 g) all-purpose flour
1 Tbsp (7.5 g) cornstarch
½ tsp (2.5 g) baking soda
½ tsp (2.5 g) salt
1 ½ cup (262 g) chocolate chips
1 cup (100 g) lightly toasted, coarsely chopped pecans (optional)
Directions
1. Cream the butter with the brown sugar and granulated sugar together well. Beat in the egg and the vanilla.
2. In a separate bowl, sift the flour with the cornstarch, baking soda and salt. Add this to the butter mixture and stir until blended. Stir in the chocolate chips and pecans (if using).
3. Using a small ice cream scoop or a tablespoon, scoop spoonfuls of dough (about 2 Tbsp) shape them into a ball and place onto a parchment lined baking tray or a plate. Chill the scooped cookies for at least an hour, or once chilled, the cookies can be frozen for baking later.
4. Preheat the oven to 325ºF (162 C). Arrange the chilled scooped cookies onto parchment-lined baking trays, leaving 3 inches between the cookies. Bake for 15-18 minutes, until browned around the edges. Cool the cookies on the baking tray. If baking cookie dough that has been frozen, arrange the frozen cookies on the baking tray and let them thaw for 20 minutes at room temperature before baking as above.
Let cool slightly and enjoy.

Makes about 25 cookies
Ingredients:
1 cup (230g) Butter, softened
2 cups (250g) Flour
2/3 cup (85g) Powdered sugar
Optional additions:
Vanilla extract
Salt
Sugar for coating
Directions:
1. Preheat oven to 350F (180C). Line a baking tray with parchment paper, set aside.
2. In a large bowl cream together the butter and powdered sugar until light and fluffy. Add the flour and mix until combined. If the dough is too soft, add 2-3 tablespoons of flour
3. 2 ways to shape the cookies:
A. Shape the dough into a disk form, wrap in plastic wrap and refrigerate for 1 hour. Then, roll out the dough into 1/4-inch (1/2cm) thick. Then, cut into desired shape (hearts, round, rectangle).
B. Roll the dough into a log shape, wrap it with plastic wrap and freeze for 30 minutes. Then, unwrap and slice the log into 1/4-inch (1/2cm) thick slices.
4. Transfer the cookies to the baking tray and bake for 12-15 minutes, until slightly golden.
5. Allow to cool.
Notes:
• Cookies can be stored in an airtight container up to 3 days.
• If the cookies are too soft, refrigerate for 30 minutes before baking
