How To make Saffron Cake
1 pn Saffron
2 tb Hot water
1 tb Yeast
1 ts Sugar
5 oz Warm water
1 lb Wholewheat flour
1 pn Salt
1/4 ts Nutmeg
3 oz Margarine
2 oz Shortening
8 oz Currants
1 oz Candied peel
5 oz Soymilk
Mix together the saffron & 2 tb hot water. Place in a covered jar & let stand overnight. Strain, reserving the water. Dissolve the yeast in warm water with the sugar. Leave to start working. Put flour & salt in a bowl. Add nutmeg. Rub in the margarine & shortening. Toss in the currants & peel. Add the saffron water to the yeast mixture. Pour it into the flour. Add the milk. Mix till you have a dough. Knead the dough in the bowl. Cover & leave in a warm place for 1 hour or until the dough has doubled in size. Heat oven to 350F. Knead the dough again. Divide it into two & put each half into a 1 lb loaf tin, greased. Cover, & leave in a warm place for 10 minutes. Bake for 1 hour. Cool on wire racks. Gail Duff, "A Book of Herbs & Spices"

How to make Swedish saffron cake (New Years recipe) | Daniella’s Home Cooking
In this video I show you how to make a classic Swedish saffron cake, that is very popular during the holidays in Sweden. This is a perfect cake to serve for Christmas or on New Years. The slightly sweet pieces of grated almond paste in the middle of the cake adds something extra to this delicious cake.

Saffron cake | English Recipe:
(Makes: 14-16 servings)
Ingredients:
4 eggs
1 cup (360 g) sugar
100 g (3.5 oz) butter
200 ml milk
2 1/3 cup flour
3 tsp (15 g) baking powder
2 tbsp (30 g) vanilla, sugar/extract
A pinch of salt
1/2 cup grated almond paste
1/2 gram of saffron
Method:
1. Preheat the oven to 350 degrees Fahrenheit (175 Celsius).
2. Whisk together eggs, sugar and vanilla extract for about a minute or until the mixture is creamy and fluffy.
3. In a saucepan, add the butter and the saffron and melt it over medium - low heat. Once it’s melted, pour the milk in the mixture and give everything a stir.
4. Mix together the dry ingredients in a separate bowl; flour, baking powder and salt.
5. Alternate the dry mix and the liquid, adding them in two stages to the egg mixture. Whisk everything until well combined, but don’t over mix the batter as it activates the gluten in the flour. Lastly, scrape down the sides of the bowl with a spatula.
5. Pour half of the batter in a greased and floured baking dish, and sprinkle over a layer of the grated almond paste. Pour over the rest of the batter, making sure that everything’s one even layer.
6. Bake the cake in the oven for about 45 minutes. (Don't over-bake the cake, otherwise it won't be moist and fluffy)
7. Once you remove the cake from the oven, let cool completely, and invert it on a platter. Lastly, dust the top with powdered sugar and serve.
