How To Make The BEST Smoked Frogged Turkey For Any Occasion
Looking for a unique way to prepare and smoke your Thanksgiving Turkey? Try this frogged or bullfrog cut with your turkey! I like to call it an Alien Turkey. It's like spatchcock turkey, but better! It smokes up just as quick, but leaves you with the white meat on one side and the dark meat on the other making it easy to carve up what your family or guests want. Yes, it looks a little weird, or even alien (I mean, I am in New Mexico) but the end result is a fantastic tasting turkey! I also used a MeatStick 4x in the breast and a MeatStick Chef X in the thighs so that I smoked this bird to the perfect internal temperatures! @Themeatstick I used my Lonestar Grillz Pellet Grill at 325 degrees so that I had the perfect amount of smoke and maintained the perfect temperature, even while it dumped rain during this cook! @lonestargrillz Living here n New Mexico, we love our red and green chile! So, I used some red chile sauce for my binder, and brushed some more on a little over half way through, adding a super delicious flavor to the skin! Talk about YUM!

Meal Prep for Sunday, 8/25/19

BREAKFAST CASSEROLE - 5 FSP/SERVING; MAKES 8 SERVINGS
These are big pieces made in a 13x9 inch pan. You could definitely make smaller servings for fewer points. This is more of a hash brown casserole, so if you don't use seasoned hash browns, I would highly recommend adding some extra spices of salt, pepper, garlic, etc. to the hash browns so that the bottom hash brown part isn't too bland.
15 eggs
1/3 cup fat-free half and half
24 oz Great Value frozen shredded hash browns
Canned Mushrooms, chopped
Spices (I used garlic powder, onion powder, salt, and pepper)
8 slices Appleton Farms center-cut bacon, cooked crisp
8 oz Velveeta shreds
Preheat oven to 400.
Cook bacon (I did mine in the air fryer on 400 degrees for 10 to 15 minutes, flipping halfway)
Spray 13x9 inch pan with olive oil spray.
Spread hash browns in pan. Sprinkle spices over top. Top with mushrooms and half the cheese.
Combine eggs and half-and-half until well mixed. Pour over casserole.
Cover with aluminum foil and bake in a 400-degree oven for 45 to 60 minutes. Remove aluminum foil and bake for up to 30 more minutes until center is set, topping remaining cheese during last 5 to 10 minutes.

GRILLED CHICKEN SALADS - 3 FSP/SERVING
I just use green leaf lettuce, iceberg lettuce, shredded coleslaw, tomato, mini cucumber, yellow squash, carrots, red onion, grilled chicken, 1/8 cup Velveeta shreds. I also had 4 slices of leftover bacon that I split in these. I use 2 Tbsp Olive Garden light Italian dressing in each.

SANTA FE UNSTUFFED PEPPERS - 4 FSP/SERVING; MAKES 6 SERVINGS
This recipe was adapted from the Skinnytaste Santa Fe Turkey Stuffed Peppers recipe:
MY VERSION:
Note! I used 93% ground turkey. If you were to use ground turkey breast, these would be 2 FSP/serving.
1 pound ground turkey
1 tsp cumin
1 can black beans
1 can corn
1 can petite diced tomatoes
1/2 onion
3 sweet peppers
1/2 jalapeno pepper
Heaping spoonful of minced garlic
3/4 cup Sargento reduced-fat Monterey jack cheese
Cilantro, for garnish
Cook ground turkey, add in 1 tsp cumin.
Rinse corn, tomatoes, and black beans well. Finely dice onion and peppers.
Add corn, tomatoes, black beans, onion, peppers, and garlic to turkey
Simmer for approximately 20 minutes on low.
Pour in about 1/3 cup reduced-sodium chicken broth.
Bake at 350 for 15 to 20 minutes, adding the cheese during last 5 to 10 minutes.
Garnish with cilantro. Serve over rice and/or dollop with sour cream for additional points.
