How To make Scallops with Spinach and Tomatoes
1 tb Olive oil
2 md Garlic cloves, chopped fine
1 cn Salt-free whole tomatoes
-(16-ounce) 1/2 c Rich, salt-free fish stock
1 tb Lemon juice
1 tb Double concentrate tomato
- paste 2 ts Sugar
1 Bay leaf
1/2 lb Bay scallops
1/4 lb Spinach leaves (about 1 cup
-packed), stemmed, ribbed, -washed, and cut into 1/2" -strips Cooked pasta-medium strands In a large skillet or saucepan, heat the oil with the garlic over moderate heat. When the garlic sizzles, add the tomatoes, crushing them with your hands, and stir in the fish stock, lemon juice, tomato paste, sugar and bay leaf. Simmer for 7 to 10 minutes, until thick but still fairly liquid. Then stir in the scallops and the spinach and continue simmering until the scallops are cooked through and the sauce is thick, 3 to 5 minutes more. Serve over cooked pasta -- suggestions: spaghetti, linguine, or fettuccine.

Ingredients:
- 8-10 large scallops
- 1 package linguine
- 1 large lemon
- 3 cups fresh spinach
- 2 garlic cloves
- 5 green onions
- 2 tbsp butter
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions:
Clean and pat good with paper towels. let scallops dry well for over 10 minutes on dry paper towels. Flip on more clean dry paper towels till dry. While scallops are drying bring salted water to a boil in pasta pot. Chop green onions and garlic or use a garlic press. Bring large skillet to a medium-high heat. Add pasta to boiling water and put timer for about 7 minutes. Do not over cook. Pour olive oil in hot skillet and place scallops with with salt and pepper. Brown for about 1 1/2 minutes on each side. Take out and set aside. In same hot skillet add onion and garlic, stir and add the spinach. Stir well and add the butter. Keep stirring and add juice of half the lemon. Add a little salt. Remember if timer goes off drain pasta and rinse. Pour pasta in skillet and stir well to incorporate the spinach mixture. And the other half of lemon juice and a drizzle of olive oil and toss. Turn heat off and place the scallops on top and grate all the lemon zest on top and serve. super fast, easy and so delicious !!! Can substitute with chicken or even shrimp
