THINGS YOU WILL NEED:
Your favorite sugar cookie recipe, or use the one from this video
Cookie sheet
Parchment paper or cooking spray
Royal icing, or icing of your choice (
Cookie cutters! Get the silver ones we used here:
FOR COOKIES:
3 c. Flour
1 c. Sugar
1 c. (2 sticks) Butter
1 Egg
1 ½ tsp Baking Soda
1 ½ tsp Vanilla (or other) Extract
½ tsp Salt
2 tsp. Water (if needed)
Directions:
1. Cream Sugar and Butter together until light and fluffy (Probably about 2 mins).
2. Add Egg and Extract and mix.
3. In a separate bowl, mix baking soda and salt with the flour.
4. Add flour mixture to butter mixture gradually, mixing well between each addition.
5. If your cookie dough is crumbly, like mine was, add water about a tsp at a time until it comes together and starts to form a ball in your mixer.
6. Refrigerate for at least 2 hours.
7. Roll out your chilled cookie dough to about ¼ inch thick and cut out your desired shapes. Re-roll scraps and repeat until all the dough is used.
8. Bake at 350 degrees F for 8-12 min. The crispier you want your cookies, the longer you cook. Any cookies you place on a lower rack in the oven will get crispier, since they are closer to the heating element. I ended up taking the bottom rack out right at 8 min. and leaving the ones on the top rack in for an extra minute. The ones on the top were chewy, the ones on the bottom were crispier. Both were delicious!

FOR ROYAL ICING:
2 c. sifted powdered sugar
4 tsp. corn syrup
4tsp. whole milk
2 tsp. vanilla extract
Gel food coloring (if you’re dying it)
Directions:
1. Add milk, corn syrup, and vanilla to the powdered sugar and mix until well combined.
2. If mixture is too thick, like mine was, add milk until it reaches the desired consistency. I think I actually ended up using 6 or 7 tsp….I didn’t measure the additional milk I added.
3. If you are coloring your icing, and if you are doing all the same color like I did, add your coloring now.
*This recipe is doubled from what I originally found, and I made two batches. That worked out to be just a little bit more than I needed for the number of cookies I had. The original recipe can be found here: HYPERLINK HYPERLINK
**If you want your icing to be WHITE, make sure you are using a COLORLESS or CLEAR extract!

Minty Chocolate Shamrock Cookies | St. Patrick's Day Recipe | Safeway
When wearing green on St. Patrick’s Day isn’t enough, try whipping up a batch of these delectably sweet mint cookies. No need to chill the dough, they’re easy to prepare and even easier to enjoy.
INGREDIENTS
8 ounces European-style butter, cold and cut into 1/2-inch cubes
1 cup sugar
1/4 cup packed finely-chopped mint leaves
1/2 teaspoon kosher salt
1 teaspoon vanilla extract
1/4 teaspoon mint extract
1 egg, cold
3 cups all-purpose flour
8 ounce baking chocolate, melted
DIRECTIONS
1. Preheat oven to 350°. Put butter in a stand mixer bowl and mix on low setting, slowly adding sugar. Increase speed to medium and add mint, salt, vanilla, mint extract and egg. Beat until loosely combined. Add flour in 1/2 cup increments, until combined but still crumbly.
2. Place dough on parchment on counter. Using your hands, press dough together. Top with an additional piece of parchment and roll out until 1/3-inch thickness. Cut desired shapes and place on parchment-lined baking sheets. Bake in oven for 9-12 minutes, until done but not browned. Let sit on baking sheet for 5 minutes, then remove to a baking rack to completely cool.
3. Melt chocolate in microwave at 30 percent power. Dip one half of cookies into chocolate and place on parchment to harden.
PRO TIPS
1. Use a set of chopsticks on both sides as guides to roll out the perfect dough thickness.
2. Be sure that all ingredients are cold. This helps contain the spread of the cookies to maintain their shape.
3. This cookie is the perfect cross between shortbread cookies and sugar cookies. No chilling is a fast and easy way to make cookies. Saves an hour or more of wait time.
