1 c Creamed cottage cheese 2 tb Lemon juice 1/2 ts Onion powder 1 c Chopped cooked shrimp OR 1 cn (4 1/2oz) tiny shrimp, Rinsed and drained 1/2 c Chopped pistachio nuts Place cottage cheese, lemon juice and onion powder in blender or food processor. Cover and blend on high speed about 2 minutes, stopping blender occasionally to scrape sides, or process, 30 seconds or until smooth. Pour into small bowl. Stir in shrimp and nuts. Cover and refrigerate at least 1 hour. Serve with assorted crackers or ruffled potato chips if desired.

Pistachio Pasta Sauce
This pistachio pasta sauce is not only delicious, but it's a great recipe to use up extra greens. Make a full 4 serving recipe to freeze for later so you can have a quick dinner in just 10 minutes.

Shrimp Pasta with Red Fresno and pistachio Pesto /Red fresno pepper and Pistachio Pesto Recipe
Ingredients
1 cup tightly packed parsley
1/4 cup pistacho
2 tbsp pine nuts
1/3 cup olive oil + 1 tsp
salt to taste
1 pound pasta of choice
3-4 garlic cloves with skin
2 red fresno peppers (preferably) If not available use 1 large Red bell peppers baked in the oven for 30 minutes at 400 F)
juice of 1 large lemon + 2 tbsp lemon juice For shrimps
1 tbsp butter
4-5 raw shrimps
Garnish:
1/2 cup cheese of choice
1 tbsp Pine nuts,Toasted
Method :
In a small skillet or grill, chard the chillies and garlic on medium-high heat. Scrape the skin off the chilies and seed them (wearing a gloves) Peel the skin from garlic and set aside.
In small skillet toast pistachio and pine nuts until slightly golden color.
Transfer pistachios and pine nuts into a food processor along with chillies,garlic,olive oil,salt,parsley. Process until corse in texture or as desired texture.
Cook pasta in a salted water as per instruction.
In a skillet add butter on low- medium heat,cook shrimps until both sides are golden and shrimp is cooked through.Add 2 tbsp lemon juice and cook until lemon juice is absorbed and shrimp is ready.
In different pot bring water to a boil with little salt in it, add broccoli and green snap peas and cook for a minute,transfer to iced water.(so it remains crunchy)
Drain pasta and transfer to large bowl.Add pesto and blanched vegetables and toss well.Transfer to plate and add shrimps on top. Garnish with cheese and serve hot.
Notes:
1. If the pesto is thick add ladle full of pasta water before tossing
2. After you chard chillies,immediately cover it with damp kitchen paper towel. This makes easy to peel the skin from chillies. PLS FOLLOW ME N LIKE MY FB PAGE
