How To make Sloppy Joe Pot Roast
-From the Kitchen of -Lawrence & Cindy Kellie 4 lb Beef round tip roast
2 tb Cooking fat
Salt Pepper 8 oz Tomato sauce
1 1/2 c Water
1 Sloppy Joe seasoning mix
2 md Potato
pared and quartered
1 c Carrot :
sliced 1/2" thick
1 c Zucchini -- sliced 1/2" thick
1. In a Dutch oven, or large pan with a tight-fitting
cover, brown meat in fat. Season with salt and pepper and remove from pan. Pour off fat drippings. 2. Add tomato sauce, water, and seasoning mix. 3. Return meat to pan. Cover and simmer for 3 to 3 1/2 hours, or until done. (Or cook in a 325F oven for same amount of time.) 4. Turn meat once to cook it evenly throughout. Add potatoes and carrots during the last 35 minutes of cooking, zucchini the last 15 minutes. 5. Remove meat and keep warm. Skim off any excess fat. Taste sauce and correct seasoning, if necessary, with salt and pepper. 6. Serve sliced meat with vegetables and sauce. INGREDIENTS
- 1 medium onion, diced
- 1 lb ground beef
- 1 lb ground pork
- 2 tbsp all-purpose flour
- 1 tsp salt
- 1 tbsp Worcestershire sauce
- 2 tsp yellow mustard
- 1/2 cup tomato juice
- 3/4 cup ketchup
INSTRUCTIONS
- In a 4-quart saucepan, heat 1 tbsp of neutral oil over medium heat. Add the onion, ground beef, and ground pork. Cook and break the meat into small pieces until it is evenly browned and cooked through, 6-8 minutes. Once the meat is cooked, check for any extra liquid in the bottom of the saucepan. If there is liquid, continue to cook until it is dry, or pour it off and discard.
- Sprinkle the flour and salt over the cooked meat and stir to combine. Cook the flour over medium-low for one minute to remove any raw flavor.
- Once cooked, remove the mixture from the heat and add the salt, Worcestershire sauce, mustard, tomato juice, and ketchup. Stir to incorporate evenly and return the mixture to medium heat. Stir and cook the Sloppy Joes over medium heat until the mixture tightens and warms through, 4-6 minutes. Once cooked, remove from the heat and serve.

How does one make a large Beef Roast Potpie from canned food? That simple. I went to my pantry and pulled a jar of my canned up Pot Roast Sloppy Joes. We all pulled a can of canned corn from the shelf as well.
If I really wanted to I could also have grabbed . . . canned potatoes, carrots, peas too. But opted for a very simple pot pie just from the sloppy joes and corn version.
Then I grabbed my all purpose flour from my kitchen cabinets and I made my own self rising flour. So we could make our biscuits. We made the biscuits up.
So far it's been so easy to get this pot pie made. Once the biscuit dough was made we simply just spread half of the dough out to make our crust.
Then we baked the bottom crust. I then opened the jar of pot roast sloppy joes and added the canned corn . I mixed those 2 up poured it onto the bottom baked biscuits.
Then I took the other half of biscuit dough to form the top crust. then baked it. 10 minutes later we had a very filling pot pie for our meal.
Who says pot pies are not filling . . . this was a stick to your ribs and a belly filling type of SHTF MEAL. Best part was it was really tasty!!!
