How to make CHILI'S | Southwestern Eggrolls
OK, maybe they're not technically eggrolls, but hey, I didn't name them. Here is what I do know, they're GOOD! SO GOOD! Crispy flour tortillas with a chicken black bean, corn, spinach and Jack cheese filling and served with an Avocado Ranch Dip, C'MON! Southwestern Chili (recipe in the description)
Caught a little off guard on this one. :P forgot to add the water in the video but will explain using words!
Recipe:
1 tablespoon butter
1lb ground beef
1/2 bell pepper
1/2 onion
2 cloves garlic
1 can crushed tomato
1 can black bean (rinsed)
1 jalapeno chopped
1 can of corn (optional)
1 cup water
1/2 teaspoon of garlic salt
1/4 teaspoon pepper
1/4 teaspoon paprika
1/4 teaspoon oregano
Sprinkle of cayenne pepper
Saute onion, garlic, bell pepper, and jalapeno in butter until soft or the onion turns translucent. Add black beans, corn, ground beef and water. Set to a low simmer stirring every 5 min until beef is fully cooked then add salt, pepper, paprika, oregano, and cayenne pepper. Adjust to taste.

Avocado Ranch:
Half a fresh Avocado, mashed
1/4 cup Mayo
1/4 cup Sour Cream
1 tablespoon Buttermilk
1 1/2 tsp Red Wine Vinegar
1/8 tsp Salt
1/8 tsp Onion Powder
Dash dried Dill Weed
1/8 tsp Garlic Powder
Dash Pepper
Fresh Parsley, minced

I don’t know that there’s ever really a time that chili does not sound good. It’s a meal that always satisfies and luckily it comes in so many different iterations! Take this Southwest Chicken Chili. It tastes like chili – it’s thick and hearty with a deep, rich background of tomato and chili flavor – and yet it’s a far cry from your basic beef chili. Maybe that’s thanks to the hint of sweetness from the corn, or the lighter bite of shredded chicken, but what I know for sure is that that southwest flavor is a welcome addition to your chili routine.
