Pasta Puttanesca: A fantastic weeknight Italian pasta dish!
Pasta Puttanesca is not only the one Italian pasta dish I cooked the most, but it is definitely also one of my favorites. Puttanesca pasta sauce has a powerful aroma with salty notes from anchovies, capers, and olives so as a sweet base from quality canned tomatoes.
The best thing about this recipe, however, is that it can only be made with ingredients from the larder.

Spaghetti alla puttanesca, italian traditional recipe
It's a very appreciated dish of the Italian cuisine, but it has quite uncertain origins.
It is also known as spaghetti alla bonne femme. The ingredients we need for 4 portions are: 360 grams of spaghetti, 500 grams of tomato flesh, 100 grams of pitted black olives, 25 grams of salted capers, 4 or 5 salted anchovy fillets, a big clove of garlic, a little hot pepper, some salt, some pepper, extra virgin oil and a bit of fresh parsley. After having put a pot with water on, we remove the salt from the anchovies and capers with running water and we chop the garlic and the parsley finely. / We cut the olives in round slices instead. / Once all ingredients are ready, we can start preparing the sauce. So we put 4 spoons of oil in a pan, we add the anchovy fillets and we crush them with a fork. We let them melt partially on moderate heat and we add some garlic. // We also add the chopped red pepper, the capers and the olives. We make it become tasty for almost one minute, then we rise the flame and we add the tomato flesh. After having cooked the sauce for 15-20 minutes, we can cook the pasta. After having added some salt, we pour it in the boiling water.
We drain the pasta when it's still firm and we directly pour it in pan. We add a spoon of cooking water and we stir fry on full heat// we let it becoming tasty for a few minutes before adding some parsley. // And in the end we serve it very hot. / We complete our dish with a slight sprinkle of parsley. // If you have got a prepared tomato sauce, you can cook your spaghetti alla puttanesca in a few minutes. Spaghetti Alla Puttanesca ????
16oz Spaghetti
1/4 cup olive oil
4-6 cloves garlic
2 Tbsp capers
3 anchovies
1 cup olives
28oz crushed tomatoes
About 1/3 cup pasta water
2 tsp chili flakes
Pinch of salt to taste ( be careful anchovies and olives are salty)
Spaghetti alla Putanesca Recipe
They said that Putanesca was first cooked by women who work at night as w**res in Italy. Thus, the name which so happen to be so very similar with the Filipino word that describes these types of women.
Putanesca or Puttanesca is one of my favorite pasta dishes and it contained ingredients that have strong personalities, so to speak. Like olives, capers and anchovies. So you need to take care not to make it too salty since these ingredients are already salty by themselves. I have to tell you that it's a bit difficult to perfect this dish and you'll have to follow my measurements in this video if it's the first time you'll be cooking this dish. And this dish was perfectly cooked in this video, by the way.

Pasta puttanesca can mean many things - a bonding moment for a family enduring unspeakable tragedy. A peace offering to a conniving, distant relative and his wannabe-drama-nerd-cronies. A prostitute pasta, its literal translation from Italian to English. Whatever pasta puttanesca means to you, it's basically a bunch of anchovies and olives mashed into spaghetti, and it tastes better than it sounds.

SPAGHETTI ALLA PUTTANESCA: RICETTA ORIGINALE
Gli spaghetti alla puttanesca sono un primo piatto saporito, per chi ama le note piccanti e non teme i gusti decisi. Le origini di questo piatto sono contese tra Lazio e Campania e il suo nome sembra discendere da diversi racconti che sconfinano nella leggenda: Le storie più piccanti e fantasiose li vogliono nati negli ambienti delle case chiuse, come piatto velocissimo da preparare con pochi e semplici ingredienti. Altre lo farebbero risalire alle fantasie culinarie di Antonio De Curtis, in arte Totò. Altre ancora riconducono la prima sforchettata di spaghetti alla puttanesca ad Ischia nel celebre locale Rangio Fellone intorno agli anni '50. Qui una sera vide la luce questa preparazione veloce e un po’ arrangiata con quello che rimaneva in dispensa: olive, capperi, acciughe e qualche pomodoro. Il termine alla puttanesca indicherebbe proprio questa preparazione improvvisata, facile e molto rapida.Di certo gli spaghetti alla puttanesca ingolosiscono per il sapido condimento che li avvolge: pomodori pelati, olive di Gaeta, capperi e filetti di alici donano a questi spaghetti un gusto unico: pronti a fare la scarpetta?
