How To make Spaghetti Rolls
1 1/2 pound Ground beef
1/2 teaspoon Pepper
1 tablespoon Vegetable oil
2 cup Spaghetti sauce -- divided
1 tablespoon Onion powder
1 cup Mozzarella cheese
1 teaspoon Salt
1 package Manicotti shells
Cook and drain manicotti shells. Cook beef in oil in large skillet over medium high heat until brown, stirring to separate meat; drain fat. Stir in onion powder, salt andpepper. Stir in 1 cup of the spaghetti sauce; cool and set aside. Reserve 1/2 cup of the ground beef mixture. Combine remaining beef mixture with cheese in large bowl. Stuff into manicotti. Arrange in greased 13x9" pan. Combine remaining spaghetti sauce with reserved beef mixture in small bowl; blend well. Pour over manicotti. Cover with foil. Bake in preheated 350~ oven 20-30 minutes or until hot. Garnish as desired.

Eggplant and spaghetti roll-ups: you won’t be able to eat just one!
Eggplant and spaghetti? No one will be able to resist this combination of ingredients!
INGREDIENTS
1 eggplant
400g tomato sauce
250g spaghetti
Parmesan cheese, as needed
provola cheese, as needed
salt
DIRECTIONS
1. Slice the eggplant and fry the slices in hot oil. Let them dry by placing them on a paper towel.
2. Prepare the tomato sauce by cooking it with some olive oil and garlic for about 20 minutes. Cook the spaghetti until al dente and pour them into the sauce.
3. Place a forkful of spaghetti onto each slice of eggplant and roll it up.
4. Make the roll-ups and then cover them with tomato sauce, provola cheese, and Parmesan cheese. Bake at 180°C for 15 minutes.

INGREDIENTS
Extra virgin olive oil
1 clove of garlic
620g (2 3/4 cups) of tomato sauce
Salt
Pepper
Basil
350g of spaghetti
4 eggplants
Oil for frying
Cheese
Parmesan
METHOD
1. In a saucepan add the extra virgin olive oil, garlic, and tomato sauce and cook for a few minutes. Season with salt and pepper and add fresh basil. Cook a few more minutes and then remove from the heat.
2. In a pot full of salted boiling water add spaghetti and boil them for 8 minutes. Remove from the heat, drain, and transfer to the bowl.
3. Pour the prepared tomato sauce into the bowl with spaghetti and mix well to combine.
4. Cut the eggplants lengthwise and transfer them to the plate. Season with salt and set them aside for a few minutes.
5. Fry the eggplants in the pan with the hot oil on both sides until they become soft.
6. Arrange the prepared eggplants on the cutting board and add the spaghetti and cheese. Roll them out.
7. Pour a few spoons of the remaining tomato sauce into the baking tray and arrange the spaghetti rolls.
8. Add a few spoons of tomato sauce over the rolls and sprinkle with parmesan cheese.
9. Bake spaghetti rolls in the oven at 180°C/360°F for 20 minutes.

Spaghetti rolls
Ingredients:
5 slices prosciutto;5 slices mozzarella;1 eggplant, thinly sliced lengthwise;200 g (7 oz) cooked spaghetti;2/3 cup tomato sauce;1 egg;breadcrumbs.
Instructions
Preheat oven to 180C/350F. Sprinkle slice eggplants with a pinch of salt and set aside for 10 minutes.Place a slice of prosciutto and some mozzarella cheese on one end of the eggplant slice. Roll tightly.Mix spaghetti with tomato sauce and egg.Line some spaghetti together to make a strip as wide as an eggplant roll.Place eggplant roll on one end of spaghetti strip and roll tightly.Sprinkle rolls with breadcrumbs and bake for 15 minutes.
