How To make Spiced Okra
1 tb Ground cumin
1/2 ts Turmeric
1 ts Chili powder
1/4 ts Salt
1/4 c Lemon juice
1 ts Dijon mustard
1/2 lb Okra
1/4 c Vegetable oil
Mix cumin, turmeric, chili powder, salt & lemon juice in a small bowl. Add mustard & mix into a wet paste. Cut stems off okra then split them three quarters of the way down. Split them again, dividing pods into 4 equal parts that are held together at the narrow end tip. Pour al ittle of the paste in to the openings, spread it lightly all over but the narrow tip. Sprinkle with salt. Heat oil in a skillet & fry okra, covered, till tender, about 10 minutes, turning them once. Ismail Merchant, "Indian Cuisine"

Okra Stir Fry Indian Style - Masala Bhindi Fry - Super Quick Okra Recipe - Easy Bhindi Recipe
This quick and easy okra recipe is my ma's recipe and one of my favorite bhindi recipes. Just make some rice and serve this as a side with maybe a bowl of dal and you do not need anything else.

Ingredients required for making masala bhindi fry -
* 1 lb/ 450gm okra (bhindi)
* 1/4 th teaspoon cumin seeds (jeera)
* 1/2 teaspoon turmeric powder (haldi)
* 1/2 teaspoon red chilli powder (optional)
* 1/4 th teaspoon ground cumin (jeera powder)
* 1/2 teaspoon ground coriander (dhania powder)
* salt as per taste
* 1 to 2 tablespoons oil
** points to note - Fry the okra on high heat to get rid of the slime. Spread the out the okra in a single layer to get that maximum heat from the pan and stir. Do this frequently till you do not see anymore slime. Add salt after all that slime dries up. Please do not overcook the okra.

Spicy Okra Nyonya Style 娘惹洋角豆 Recipe
Okra (ladies finger) 15-18 nos
Belacan 20g
Dried Shrimp 3 tablespoon
Red Chili 2 nos
Cili Padi 1 no
Garlic 3 gloves
Calamansi 6-7 nos (Depends on size)
Shallots 6 nos
Sugar
Fish Sauce
Prepare Okra
1) Boil Water
2) Add in sugar, salt & olive oil then okras
3) Cook for 2 minutes
4) Transfer to cold water
5) Trim off the stem and arrange on plate
Prepare Belacan & Dried Shrimps
1) Toast 20g belacan untill fragrant, set aside
2) Wash dried shrmp and roughly chopped
3) Toast in pan untill dry, add in oil and fry till crispy
Prepare Chili Paste
1) Roughly chop 2 red chilies, 1 cili padi, 3 gloves of garlic
2) Blend till smooth
3) Slice 6-7 shallots
4) Squeeze 6-7 Calamansi juice
5) Mix blended chili paste into calamansi juice
6) Add in 2-3 teaspoon sugar, 1 tablespoon fish sauce, toasted belacan and taste (Depends on individual taste)
7) Mix well with sliced shallots
Service okra with spicy chili paste and sprinkle crispy dried shrimp on top

In this episode, tasty and healthy vegetable dish, Bhindi Masala is being made. A very popular main course item commonly made in India.
Ingredients:
250gms chopped Okra (Bhindi)
1 small Onion, cut lengthwise
1&1/2 Tomato finely chopped
1/2 tsp Garlic Paste
1/2 tsp Ginger Paste
Coriander Leaves
Salt
1/2 tsp Mustard Seeds
1/4 tsp Red Chilli Powder
1/4 tsp Turmeric Powder
1/2 tsp Raw Mango Powder (Aamchur Powder)
1/2 tsp Garam Masala
1 tsp Coriander & Cumin Powder
2 tbsp Oil
Sesame Seeds
Method:
- Cut the Okra into 1 inch long pieces.
- Heat oil in a frying pan, add mustard seeds and Okra, stir well.
- Meanwhile in a different pan, heat some oil, add ginger paste, garlic paste and chopped onions. Saute for few mins.
- Add tomatoes, turmeric powder, red chilly powder, raw mango powder, coriander & cumin seeds and stirl.
- After couple of mins add garam masala & salt. Cook till the tomatoes are nice and soft.
- Add coriander leaves.
- Once the okra is cooked, add it to the onion and tomato mix.
- Add some more salt. Stir and mix well
- Bhindi masala is now ready to be served hot, after garnishing with few sesame seeds.
