Halloween Cupcakes Recipe! | Becci Bakes
Hey guys! ????
A yummy mix of chocolate cupcakes and cream cheese frosting makes these spooky cupcakes a perfect treat for Halloween. Orange food coloring gives these cupcakes their bright orange frosting. Finish off with some melted dark chocolate and fondant ghosts, pumpkins and bats for decoration. Happy Halloween!

Recipe Halloween Cupcakes

EQUPMENT

#829 Tip
Decorating bag
INGREDIENTS
Cupcakes
3 eggs
1/2 cup (1 dl) Brown Sugar
3/4 cup (1 3/4 dl) Granulated Sugar
1 tsp Vanilla Extract
1/4 cup (1/2 dl) Vegetable Oil
1/2 cup (1 dl) Sour Cream
2 tbsp Water, Cold
1 1/2 cups (3 1/2 dl) All Purpose Flour
1/4 cup (1/2 dl) Cocoa
1/2 tsp Salt
2 tsp Baking Powder
3 1/2 oz (100 g) Dark Chocolate
CREAM CHEESE FROSTING
7 oz (200 g) Cream Cheese
½ cup (120 g) Butter, Room Temperature
6 cups (14 dl) Powdered Sugar, Sifted
1 tbsp Vanilla Extract
2 tbsp Heavy Cream
Orange Food Coloring
Fondant Halloween Decorations
INSTRUCTIONS
Cupcakes
In a large bowl, whisk together 3 eggs, brown sugar, granulated sugar and vanilla extract until smooth and fluffy. Whisk in vegetable oil, water and sour cream.
In a medium bowl, whisk together flour, cocoa, salt and baking powder.
Add the flour mixture into the sour cream mixture. Stir until well combined.
Chop up the chocolate into small pieces and melt in a water bath. Add to the batter and mix until combined.
Line a cupcake tray and fill two-thirds full with batter.
Bake for about 15 minutes at 350°F or 175°C. Let cool.
Frosting
In a big bowl, mix cream cheese, room temperature butter, vanilla extract and heavy cream. Slowly add powdered sugar and beat until smooth.
Add orange food coloring and mix.
Scoop frosting in piping bag fitted with a #829 tip.
Melt chocolate over water bath and add into decorating bag.
On completely cool cupcakes, pipe two swirls of the frosting on top of each one.
Drizzle the melted chocolate on top and add a fondant Halloween decoration.

Halloween Chocolate Cupcakes
Difficulty: easy
Time: 1 hour
Number of servings: 8 (5cm/2inch) baking cups
Necessary Equipment:
electric mixer
Ingredients:
((Chocolate Cupcakes))
100g (3.5oz.) chocolate
150ml heavy whipping cream (fresh cream) *chilled
2 eggs *room temperature
100g (3.5oz.) granulated sugar
180g (6.3oz.) cake flour
1/2 tsp. baking powder
((Decoration))
100g (3.5oz.) chocolate
sprinkles of your choice
Directions:
((Chocolate Cupcakes))
1. Place the chocolate (broken into pieces) in a bowl. Melt the chocolate in a double boiler over hot water (60C/140F). Leave to cool slightly but not harden.
2. Place the chilled heavy whipping cream in a bowl. Whip the cream with an electric mixer until it forms a stiff peak.
3. In a different bowl, place eggs and sugar. Then beat them with an electric mixer until white and fluffy.
4. Add the cream (2.) into the egg mixture (3.), and mix well with a wire whisk.
5. Then add the chocolate (1.) and mix well with a wire whisk.
6. Sift in flour and baking powder. Gently mix with a wire whisk or a spatula until combined.
7. Preheat the oven to 180C (350F).
8. Spoon the mixture into the cups up to 80% full. Bake at 180C (350F) for 20-25 minutes.
9. Place the cakes on a wire rack to cool completely.
((Decoration))
1. Place the chocolate (broken into pieces) in a bowl. Melt the chocolate in a double boiler over hot water (60C/140F). Leave to cool slightly but not harden.
2. Spread the chocolate on top of the cupcakes using a spoon. Then finish with sprinkles of your choice.

Ingredients:
1 (15.25 oz) box dark chocolate cake mix
4 oz cream cheese , room temperature
1 cup canned pumpkin
1 cup confectioner's sugar
8 (1 oz) squares semisweet chocolate
3/4 cup heavy whipping cream

Directions:
1. Preheat oven to 350 °F. Spray 2 (12-cup) muffin pans with nonstick baking spray with flour. (Do not use paper liners.)
2. Prepare cake mix according to package directions for cupcakes. Let cool in pans for 10 minutes. Remove cupcakes from pans, and place, rounded side down, on wire racks to cool completely.
3. In a medium bowl, beat cream cheese at medium speed with an electric mixer until creamy. Gradually add pumpkin and confectioner’s sugar, beating until smooth.
4. Cut each cupcake in half horizontally. Spread about 2 tablespoons pumpkin mixture evenly over cut side of rounded cupcake halves. Top with cut side of flat cupcake halves.
5. In a medium bowl, combine chocolate and cream. Microwave on High, in 30-second intervals, stirring between each, until chocolate is melted and cooled. Spoon desired amount of chocolate over flat side of each cupcake. Cover, and chill, or serve immediately.
