How To make Steamed Stuffed Bitter Melon
STUFFING:
1/2 lb Pork, ground [I minced it
-with cleavers. S.C.] 4 Fresh water chestnuts,
-peeled and finely minced 1 ts Minced fresh ginger root
2 tb Minced scallion
1 1/2 tb Shaoxing wine or dry sherry
1/2 ts Salt
1/2 ts Sugar
1 tb Thin soy sauce
1 Egg, lightly beaten
1 ts Cornstarch
2 lg Bitter melons, about 3/4 to
-1 lb. SAUCE:
2 tb Peanut oil
2 ts Minced garlic
1 1/2 tb Fermented black beans
1 tb Shaoxing wine or dry sherry
3/4 c Chicken broth
Salt to taste 1/2 ts Cornstarch mixed with 1
-teaspoon cold chicken broth 1 tb Sesame oil
From Ken Hom's book, -Chinese Technique. Combine the stuffing ingredients in a large bowl. Mix them thoroughly. The hands are the best tool for this job. Cut the bitter melon into 1-inch slices; discard the end pieces. With a paring knife, trim out the insides. Lift them out. Stuff the cavity of each slice with a generous spoonful of stuffing. Arrange the stuffed pieces of vegetable on a plate and set the plate on a trivet in a wok over enough hot water to come within 1 inch of the plate. Cover the wok and steam the food for 20 minutes. Remove the platter and trivet. In a separate wok or pan, prepare the sauce. First heat 2 tablespoons peanut oil. Add the garlic and fermented black beans, stir for a minute, then add the Shaoxing wine, chicken stock and salt. Add the liquid that results from the steaming of the melon. Bring the mixture to a boil. Thicken with the dissolved cornstarch and flavor with sesame oil. Pour the sauce over the bitter melons and serve. Serves 2 as a main course. NOTE: Hom makes no mention of blanching although another bitter melon recipe in another book *does* say that it will cut the bitterness. Posted by Stephen Ceideburg; February 25 1991.

2️⃣ 苦瓜切成圓筒,用小刀刮除苦瓜的籽和白色的膜,把豬肉釀入苦瓜圈中。
3️⃣ 熱鍋下油,煎香苦瓜兩面至金黃色.
4️⃣ 下蒜頭和豆豉爆香,加入適量的熱水,小火炆30分鐘,如要更腍炆45分鐘。
5️⃣ 盛出苦瓜,鍋內原汁勾芡,淋上苦瓜面。

苦瓜又名涼瓜、半生瓜,含豐富維他命A、C、E、鐵、鎂、鉀、葉酸和類胡蘿蔔素等。《本草綱目》記載,苦瓜味苦性寒,無毒,除邪熱,解勞乏,清心明目。

????Cooking Directions:
1️⃣ Marinate the minced pork with a small amount of ginger juice, white pepper powder, salt as needed, 1/2 teaspoon of sugar, 1 teaspoon of dark soy sauce, 1 tablespoon of cornstarch, and a little oil.
2️⃣ Cut the bitter gourd into cylindrical pieces and use a small knife to scrape out the seeds and white membrane. Stuff the bitter gourd rings with the seasoned pork.
3️⃣ Heat oil in a pan and pan-fry the bitter gourd on both sides until golden brown.
4️⃣ Add garlic and fermented black beans to the pan and stir-fry until fragrant. Pour in enough hot water and simmer over low heat for 30 minutes, or 45 minutes for a softer texture.
5️⃣ Remove the stuffed bitter gourd from the pan and thicken the sauce with cornstarch. Pour the sauce over the bitter melon and serve.

This savory and aromatic soup is made with bitter melon stuffed with a flavorful pork and glass noodle filling. It's known as Tom Jeud Mara Yad Sai Moo Sub, or also known as Gaeng Pak Xai. Stuffed Bitter Melon Soup Recipe
Today I'm going to make bitter melon soup. My sister and mom made this soup all of the time and I grew accustomed to it. The bitter taste is what made it unique. Below is the recipe. Enjoy.
Filling:
1 pound ground pork
3/4 teaspoon black pepper
1 teaspoon salt
2 teaspoon sugar
1 teaspoon chicken base mixed
Soup:
2 bitter melons. Cut into 3 and scoop out the inside. Put the filling inside
6-7 cups water
2 teaspoon salt
1 teaspoon sugar
1 teaspoon chicken base mixed
Cook the soup for 30-40 minutes after adding all of the seasons
