How To make Stir Fry Beef and Snow Peas

1 lb Boneless sirloin steak
2 ts Cornstarch
1 tb Soy sauce
1/2 c Peanut or vegetable oil
2 oz Cellophane noodles, uncooked
6 oz Frozen snow pea pods, thawed
And drained 2 tb Peanut or vegetable oil
2 sl Fresh ginger (1" slices)
1 tb Peanut or vegetable oil
2 Carrots, scraped and cut in
1/8 inch slices
15 oz Baby corn, drained
15 oz Straw mushrooms,drained
1 ts Cornstarch
2 tb Soy sauce
2 tb Rice wine
Partially freeze steak; slice diagonally across grain into thin strips. Combine 2 teaspoons cornstarch and 1 tablespoon soy sauce in a medium bowl, stirring until smooth; stir in steak. Cover and marinate in refrigerator 1-4 hours, stirring occasionally. Pour 1/2 cup oil around top of preheated wok or large
skillet, coating sides; heat at medium-high (375) for 2 minutes. Add noodles, a small amount at a time,
andstir-fry 2-3 seconds or until noodles expand and turn white. Remove noodles, and drain on paper towels; arrange in a ring on a serving platter. Drain excess oil from wok. Add snow peas to wok; stir-fry 2 minutes. Remove from wok, andarrange around edges of noodles. Pour 2 tablespoons oil around top of preheated wok, coating sides; heat for 2 minutes. Add steak and ginger; stir-fry 4-5 minutes or until steak is no longer pink. Remove from wok, and set aside. Pour 1 tablespoon oil around top of preheated wok, coating sides; heat for 2 minutes. Add carrot, corn, and mushrooms; stir-fry 3 minutes. Combine 1 teaspoon cornstarch, 2 tablespoons soy sauce and wine; stir until smooth Add cornstarch mixture to carrot mixture; stir fry 1 minute or until thickened. Add steak mixture; stir-fry until thoroughly heated. Spoon steak mixture into center of platter.

This is a healthier stir fry using less oil and healthier ingredients.
Asian Beef and Snow Peas
• 680 g or 1.5 lbs of sliced flank steak
• 1 tsp of sea /kosher salt
• 1 egg white
• 3 Tbs cornstarch
• 2 Tsp of olive oil
• 454 g of snow peas
• 3 Tbs minced garlic
• ¼ cup of water
• 1 small onion sliced
• 2 Tbs of cane sugar or white sugar
• 3 Tbs soya sauce
• 1 Tbs dark soya sauce
• 1 Tbs of cornstarch slur ( 1 Tsp of cornstarch & 1 Tbs of water mixed )
• 1/2 Cup water ( for frying snow peas )
• 3-6 TBS of coconut oil or more for frying
• 1/2 Cup of water for sauce
• * Sea salt and black pepper for taste
Instructions:
Beef Marinate / how to velvet beef
1. Slice your beef or flank steak thinly across the grain.
2. Add 1 tsp of sea or kosher salt, 1 egg white and mix thoroughly.
3. Add the cornstarch mix evenly to coat the beef, then add the olive oil. This helps to prevent sticking when you fry the beef.
4. Cover and let it marinate in the fridge for approximately 30 minutes. This will make the beef very tender, just like in the Chinese restaurants.
Snow Peas
1. Wash, and rinse snow peas. Carefully peel the stingy sides of the snow peas off by pinching the middle top end of the snow peas, and with your other fingers pull towards you to pull the string sides off.
2. Heat to medium high a fairly large non-stick pan or wok, add 1 tsp of the minced garlic just to a sizzle, add the snow peas, and mix the snow peas and garlic for approximately 2-3 min.
3. Season with salt and black pepper to taste. You will see that the snow peas are starting to turn bight green. At this point add ¼ of water to steam the snow peas, and toss slightly, then cover with a lid for approximately 45 seconds. Remove the lid, and you will see that the snow peas are bright green. Remove to a separate bowl.
Frying the Beef
1. Add your oil of choice 3- 5 TBS ( I like to use an organic refined coconut oil for a healthier choice )
2. Fry in small batches for best results, as beef will brown nicely.
3. Remove the cooked beef into a separate bowl or even use the same bowl as snow peas.
Don’t worry if some of the beef is still pink, you will be adding it back to the pan when you cook the sauce.
4. In the same pan, add extra oil as needed. Add the onions, remaining garlic, soya sauce, dark soya sauce, corn starch mixture (SLUR) and water. * Add black pepper to taste
5. Simmer until the sauce thickens and then back the cooked beef and snow peas.
6. Toss gently, and add a splash of the dark soya sauce to deepen the colour of the beef.
*Serve over rice (I cooked jasmine rice and cooked it with some quinoa – just adding a healthier kick to traditional white rice)

STIR-FRY STEAK WITH SNOW PEAS | Fast and Delicious for Vegetables DIRECTLY from Your Garden
One of my greatest pleasures in cooking is when the summer garden vegetables come into season. My wife loves gardening and she takes great pride in the delicious and nutritious vegetables that she carefully plants and nurtures in her garden. I have many friends who are also dedicated and committed gardeners. One of my friends, Brad, brought me some snow peas from his garden yesterday. They looked so delicious and enticing, and I decided to cook it in the same evening with beef for our dinner. I chose to cook them with beef, using a cut known as flank steak in part responding to a question that a person (also known as Brad) asked me during my last live streaming session. He would like to know what is the best cut of beef for stir-frying. I have great success with flank steak over the years. I prep the flank steak the same way as I prep chicken. Therefore, I was able to have the beef ready for stir-frying in less than 10 minutes. Advanced prepping in combination with stir-frying, flavor chasing, and template-based cooking of my FAST Cooking System allows me to cook almost anything that I would like to eat anytime. In addition to this beef with snow peas dish, I also cooked two additional dishes for dinner, all in less than 30 minutes. You can do the same. INGREDIENTS
Marinade
1 lb (450 g) flank steak (or skirt steak), thinly sliced against the grain
1 tablespoon oyster sauce
2 teaspoons Shaoxing wine (or dry sherry)
1 teaspoon peanut oil (or vegetable oil)
1 teaspoon cornstarch
Sauce
1/4 cup chicken stock
1 1/2 tablespoons oyster sauce
1 tablespoon Shaoxing wine
1 teaspoon dark soy sauce (or regular soy sauce)
1/2 teaspoon sugar
1 teaspoon cornstarch
1 teaspoon sesame oil
Stir Fry
1 to 2 tablespoons peanut oil (or vegetable oil)
2 cups (6 oz / 170 g) snow peas, trimmed & strings removed
1/2 onion, sliced into thick strips
1/2” (1 cm) ginger, minced
1 clove garlic, minced
